Admittedly, I have this for breakfast all week at least once a month, it’s my favorite! This would be a great one because you could make the quiche ahead of time and then just do the quesadillas individually while everyone is talking and sipping their coffee! Vegetarian, it can be gluten or grain free if you use a gluten or grain free tortilla.
Healthy Breakfast Sausage Casserole
This one is more traditional casserole style and man it’s delicious! Filled with flavorful chicken sausage and hearty whole grain bread, it’s DELICIOUS. You can make ahead and let it sit in the fridge overnight until baking but you don’t have to! You would have to use gluten free bread to make this gluten free.
