This Chocolate Peanut Butter Protein Mug Cake is ready in less than one minute! A more filling way to satisfy your sweet tooth!
Happy quarantine? Ya, I don’t know about that. I’ve been talking to a lot of readers and clients about “eating” during the quarantine. A ton of people aren’t used to being surrounded by food all the time, and that can be overwhelming, especially with scary news and stress cumulating seemingly every second. It’s a lot. A lot, a lot.
Stress in a time like this can lead us to want comfort food. And let me tell you a little secret THAT IS 100% OKAY. It is a normal physiological response to stress. Instead of going to extremes, we need to be strategic.
I’m not a fan of extreme restriction or binging at any time, mainly because they usually occur in a vicious cycle. One inevitably leads to another. Instead, I try to focus on having enough protein, produce, and water throughout the day. That helps manage stress, hunger, energy levels, and cravings throughout the day.
I also typically have dessert every day. Sometimes it’s a healthier dessert like this DELICIOUS chocolate peanut butter protein mug cake (also works as a high protein filling snack), and sometimes it’s not as healthy. But, I have treats every single damn day. Now, and when I lost 55lbs last year after my son was born.
That’s what keeps me from eating handfuls of chips directly out of the cabinet or eating leftover Annies Bunnie Grahams off my kid’s plate, knowing I can have treats when I want them. So it’s easier to stop me from mindless, boredom, or stress-eating.
Once I catch myself, I remind myself of whatever treat I PLANNED to have. Sometimes I’m planning a pile of chips and guac with dinner. Sometimes it’s this mug cake or my all peanut butter protein mug cake version. Sometimes it’s not healthy all like Grandma’s no-bake cookies.
also been enjoying this as a high protein healthy snack mid-afternoon when the sweets craving hits. It’s filling, full of protein, and feels indulgent, so that works too!
How to Make Chocolate Peanut Butter Protein Mug Cake
It takes one freaking minute to make and one minute to cook, so I guess it takes two minutes total. Combine all the dry ingredients in the mug. Keep in mind that I like to use ramekins because they are wider and shallower than actual mugs. A coffee mug will work too. You just might have to cook it a little longer to get it fully set in the center. Not a big deal.
Add some milk or water and stevia drops (if you like things super sweet like I do) and stir it. You’ll then plop it in the microwave for a minute or so until fully set.
Then decide on your toppings, my favorite is melted chocolate chips or melted peanut butter. Both are soooooo yummy. It just depends on what kind of mood you are in. Ya, feel me?
Let’s talk ingredients:
Peanut Butter Powder – I typically use the Organic PBFit from Costco. Some peanut butter powders vary by sugar and thickener amounts, so different brands may require different amounts of liquids to be added in, but all should work.
Almond Milk – You can use any nondairy milk here and I suspect water or real milk would work as well.
Chocolate Protein Powder- I’ve ONLY tried this recipe with chocolate whey protein. I have not tried vegan protein because I didn’t have any on hand if you try it please let us know in the comments!
Cocoa Powder – unsweetened baking kind. You can omit this if you want, it just makes it more chocolatey, which you can never have enough of in my opinion.
Baking Powder – Do not omit.
Stevia – totally up to you if you are on the stevia train or not. However, I’m not sure if you can sub real sugar or maple syrup here because that will change your liquid/peanut butter powder ratio.

1 Minute Chocolate Peanut Butter Protein Mug Cake
Ingredients
- 3 tbsp PB Fit Powder
- 2 tbsp chocolate protein powder I used whey
- 1 tsp cocoa powder
- 1/4 cup unsweetened vanilla almond milk
- 1/4 teaspoon baking powder
- 4-6 drops stevia drops vanilla or plain
- optional: 1-2 tablespoons chocolate chips or peanut butter topping
Instructions
- Combine PB fit, chocolate protein powder, cocoa powder, vanilla almond milk, baking powder, and stevia in a small shallow dish. If you want to add in chocolate chips do so now. You should get a paste-like substance about the consistency of Greek yogurt, add more peanut powder if it is too liquidity.
- Microwave for one minute. It may take longer if you have a lowered powder microwave. Microwave till not soft in the middle anymore.
- If desired top with peanut butter and devour!
