This is my favorite dessert when I want to stay on track but am craving something delicious! Peanut Butter mug cake in less than one minute!
Hi Friends! Blogging a little later this morning because it’s been one of those mornings. I went to Orange Theory this morning way earlier than I usually do because I knew it was gonna be one of those days.
I started in a rush because my computer froze so I thought it was 6:14, but it was 6:25, as you know, 10 minutes make a HUGE difference in the morning. Then I swung through the Starbucks drive-thru for a cold brew and feta wrap for breakfast. Then I proceeded to be the WORST dog mom ever.
I put the leash on Nala and said “let’s go for a walk,” and then I remembered the power was going out and I needed to shower. Then I had to take off the collar which might have been the saddest moment EVER; I felt TERRIBLE. I gave her a treat and jumped in the shower.
When the power did go off my first thought was the food, ask me why I didn’t think of that before? More concerned about the shower I guess. I scrambled to get some of it in the cooler and pack the freezer, so all the frozen stuff was together. Then I had to call Mr. Hungry to figure out how to manually open the garage, FML.
UGH, then the power ended up going back on right before I left, which was good because then I put the food from the cooler in an insulated bag back in the fridge. I figured that way it would be safe even power went off again.
Turned the AC down and turned off all the lights that had turned on. Man, what a pain in the arse! So, that’s my morning. Now I’m blogging while getting my hair done, thanks Brad for being such a good sport!
As far as this dessert goes, I just slammed you with a million pictures of it because it’s one of my favorite desserts ever! You know those nights when you want to dessert but you also really don’t want to give into the sugar craving? Enter this delicious PB mug cake!
I started making versions of this online with coconut flour or oat flour. Eventually, I kept taking things out of the recipe until I was basically down to four ingredients! You can whip it up in one minute in the microwave, so it’s quick. Plus, it’s full of protein so it will be a more filling yet sweet tooth satisfying dessert.
PS I find it’s better made in a small bowl, not an actual “mug.” Something shallow works better than a mug so the cake can cook evenly. Mr. Hungry likes to put chocolate chips in his (which is how the nutrition facts are calculated), I like to top mine with about a teaspoon of real peanut butter. Either way, this will definitely be your new favorite dessert!
PS Because I’m chocolate lover through and through, I also developed a chocolate version of this mug cake for all my other chocolate addicts out there!

Let’s talk ingredients:
Peanut Butter Powder – I used PBFit from Costco. In theory, any PB powder should work, but not necessarily. Different peanut butter powders have different fillers or added sugar, so your results may vary if you use another type. This may especially change the amount of liquid you need to add.
Almond Milk – You can use any nondairy milk here and I suspect water or real milk would work as well. In theory, you could use orange juice, I wouldn’t suggest it taste-wise, but you just need a bit of liquid here.
Baking Powder – Do not omit.
Stevia – totally up to you if you are on the stevia train or not. However, I’m not sure if you can sub real sugar or maple syrup here because that will change your liquid/peanut butter powder ratio.
Add-Ins: Up to you, totally depends on what you want. To keep things low calorie you could add in stevia chocolate chips, or just go for the real stuff. Just keep in mind this will change the nutrition content of the recipe.

1 Minute Peanut Butter Mug Cake
Ingredients
- 1/4 cup PB Fit Powder
- 1/4 cup unsweetened vanilla almond milk
- 1/4 teaspoon baking powder
- 4-6 drops stevia drops vanilla or plain
- optional: 1-2 tablespoons chocolate chips or peanut butter topping
Instructions
- Combine PB fit, vanilla almond milk, baking powder, and stevia in a small shallow dish. If you want to add in chocolate chips do so now. You should get a paste-like substance about the consistency of greek yogurt, add more peanut powder if it is too liquidity.
- Microwave for one minute. It may take longer if you have a lowered powder microwave. Microwave till not soft in the middle anymore.
- If desired top with peanut butter and devour!

This was not good. I followed the recipe exactly and ended up with a doodoo paste. I cooked it a bit more and nope. It never cooked into a cake like in the pictures. My baking powder was fresh. This was yucky.

I think you needing the baking powder! It helps it make it into a cake where as coconut flour wouldn’t

When I’m in stressful moments, I crave sweets like crazy. Chocolate, brownies, cookies, cake, anything. So even though I’ve been too exhausted for baking, I’ve been able to make these simple mug cakes to de-stress when I come home. A few minutes of mixing, and 2 minutes of microwave cooking and these are ready to be eaten.

I made it with PB2 Chocolate, coconut-almond milk and sprinkled it with 60% chocolate chips. Wonderful!! I had to add extra PB2 and I didn’t add stevia.

OH. MY. GOSH. This is my first review I have ever left on a recipe out of the many I have tried. J honestly didn’t have high hopes for this- I thought it may just taste… like pb2. Or have a weird texture. I didn’t even have to add stevia!! I added just a pinch of cinnamon (trust me, it’s amazing) and some chocolate chips and it was fluffy, moist, cakey, and delicious!!! Thank you times a million!!!!

I made the regular version. It was good but next time I will mix the dry ingredients first because it had a slight baking powder taste. Thanks for the easy recipe !

That happens to me when I add a little too much, make sure you level off that 1/8 tsp! Also, I think mixing the dry ingredients first will help too!

Love this! I made it with coconut milk instead of almond, to cut the calories, and added a few drops of almond extract. Delicious! And it came out to 115 calories. I topped it with a quarter cup of Halo ice cream.
Delicious pudding like cake with ice cream for just 150 calories!
This is my new go to for a sin free late night indulgence!

This is delicious!! I used PB2 Powder and it didn’t get to a paste like consistency. It was pretty runny so I added a small amounts of protein powder (I used Devotion Nutrition Angel Food Cake) until it thickened up to a paste like consistency. Used about 1 TBS of mini dark chocolate chips and popped it in the microwave for a minute and it was AMAZING!!!! Thanks so much for the recipe!!!

Unfortunately won’t be making this one again. The cake never really sets even after nearly 2 mins in the microwave, it’s so thick and rich and gluggy made me feel sick afterwards.
Also ur macros look way off, I calculated it with the products I was using and got 5g carbs total, understand there to be a slight variance due to different products u used compared to me, but that’s a big difference.. But in a good way lol.
