I’ve been dying to publish this waffle version of my uber-popular healthy waffle recipe.
Once a month, I usually make a boatload of waffles, let them cool, and freeze them. I don’t love making things from scratch that I can purchase at the store, but the waffles at the store are like eight bucks for six waffles, at least for the healthier ones. So, those I make.
I got the idea to try a pumpkin version, and the first couple of tries did not go well, but luckily, I landed on something that the kids LOVED. We’ve been eating them all month from the freezer, so I knew I had to share!

How to Make Healthy Pumpkin Waffles
This is an easy blender waffle recipe! You can blend all the ingredients and then pour them directly into your waffle maker! The full how-to is on the recipe card below.
Swaps and Substitutions for Healthy Pumpkin Waffles Ingredients
This recipe is vegetarian and dairy-free. Please see below for modifications to make them gluten-free and/or vegan.
Eggs – I have not tried using flax eggs or egg substitutes in this recipe, but I’m sure it would work just fine. The waffles may not be as light and airy, but they will still be crispy and taste delicious.
Rolled Oats – You could substitute quick oats if needed. Or, if you are really in a pinch and only have instant oats, that may work, but you probably need less than a cup to make an equal equivalent. Do not omit.
Whole wheat flour – do not omit but, if you need gluten-free, sub-gluten-free 1:1 flour here.
Milk – you can use any dairy or nondairy milk. I tested these with whole milk, ripple original milk, and unsweetened vanilla almond milk. They were all delicious!
Baking powder – do not omit.
Salt – salt brings out the sweetness, but omitting this will change the flavor significantly. You can do it if you want!
Coconut oil – palm oil, butter, canola oil, avocado oil, or even olive oil could be substituted here. (Olive oil might have a strong taste, though.) Please don’t use vegetable oil. See more about healthy cooking oils here!
Vanilla extract – for flavor!
Pumpkin Puree – You’ll want to use canned pumpkin puree here. Don’t accidentally get pumpkin pie filling, just plain pureed pumpkin.
Pumpkin Pie Spice – You can also try cinnamon, nutmeg, and cloves if you don’t have a pre-made blend. I would do 1.5 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ground cloves.
Maple Syrup – You can swap any other LIQUID sweetener. If you choose to omit this, you need to up another liquid (such as the milk) by 1/4 cup. I really had to play with the exact wet-to-dry ingredient ratio to get these waffles to work, so make sure you get the wet-to-dry the same.
How to Freeze and Store Healthy Pumpkin Waffles
Storing Healthy Pumpkin Waffles in the Refrigerator
They can be stored in the refrigerator for up to 3 days.
Cool Completely: Let the waffles cool fully to prevent condensation, which can make them soggy.
Use an Airtight Container: Store the waffles in a single layer in an airtight container. If stacking, separate layers with parchment paper or wax paper to avoid sticking.
Freezing Waffles
You can freeze these waffles for up to 3 months.
Cool Completely: Just like with refrigeration, let the waffles cool completely. As long as I do this, I don’t have an issue with them sticking together in the freezer.
Place Into a Freezer Bag or Freezer Safe Container: Transfer the waffles to a freezer-safe bag or airtight container. Remove as much air as possible from the bag to prevent freezer burn.
Reheating Waffles
Reheating from the refrigerator: Just pop them back in the toaster or toaster oven until crispy.
Reheating from the freezer: I microwave for 60 seconds, then pop them in the toaster or toaster oven!
Tips for Freezing Batter Instead
I’ve never tried this, but if you prefer to freeze the batter, Portion the batter into freezer-safe bags or containers. Thaw overnight in the fridge and cook as usual.

Equipment
- 1 Blender
Ingredients
- 2 large eggs
- 1 cup rolled oats
- 1 cup whole wheat flour or gluten free 1:1
- 3/4 cup unsweetened vanilla almond milk
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup coconut oil melted
- 1 tsp vanilla
- 1/2 cup canned pumpkin puree
- 1/4 cup maple syrup
- 2 tsp pumpkin pie spice
Instructions
- Preheat the waffle iron. Combine all ingredients in a blender or food processor, and blend until smooth.2 large eggs, 1 cup rolled oats, 1 cup whole wheat flour, 3/4 cup unsweetened vanilla almond milk, 1 tsp baking powder, 1/2 tsp salt, 1/4 cup coconut oil, 1 tsp vanilla, 1/2 cup canned pumpkin puree, 1/4 cup maple syrup, 2 tsp pumpkin pie spice
- Spray the waffle iron with cooking oil or cooking spray. Follow the waffle maker manufacturer's instructions. Mine took 6-8 minutes per batch of waffles. See notes for freezer info.
