Hi Friends! Today I’m sharing 10 unbelievably good ways to eat zucchini. Zucchini season is here to stay and I’m so excited because I can find them as big as my head at the Farmer’s Market! I love Zucchini, it’s such a versatile vegetable. Mild in taste and naturally creamy in texture, it’s an easy vegetable to sneak into so many different types of recipes. Zucchini is a rich source of important antioxidants like Vitamin C and carotenoids. Lutein and Zeaxanthin are two types of carotenoids found in summer squash that help support eye health. Summer squash also provides a B-vitamin bunch which is important for energy and metabolism. Don’t forget about fiber which helps regulate blood sugar and keep you full!

My favorite way is using a spiralizer to make noodles out of zucchini, then just sauteing them with a little bit of olive oil and garlic!
