Teriyaki Grilled Artichokes with Spicy Sriracha Dipping Sauce! Don’t be intimidated by artichokes they are insanely easy to make and even more delicious when you grill them!
What up what up! Happy Hump Day! I am SO freaking excited to FINALLY share this recipe with you! Since I photographed so many recipes in preparation for the move to the apartment (temporary move between houses) I feel like I’m antsy to share them all with you.
Since I like blogging in real time, it’s hard to have photographed recipes so long ago and then have to wait to share them. I thought it might be hard to describe them since I can barely remember what I ate yesterday much less a few weeks ago.
These babies though, I totally remember. Most likely because artichokes are the scary silent bully of the vegetable world. They are so freaking intimidating! I hadn’t made one since my mother in law taught me how to make them, literally on a Facebook live over Memorial Day weekend. I decided to try cooking them in my new instant pot, which was a total success! Like everything with the Instant Pot, life is so much easier.
I prepped my artichoke and then set them up in the Instant Pot while I got a workout in! Now that is multitasking I can get behind! Anytime I have to wait for the water to boil for a recipe I feel like it’s the worst thing that ever happened to me (I know, so dramatic.)
OR, I spend the entire time watching the water and snacking out of the fridge. No waiting for the water to boil means I’m working out instead of snacking out of the fridge, double win!

Teriyaki Grilled Artichokes with Sriracha Dipping Sauce
Ingredients
Ingredients:
- 2 Medium Artichokes
- 1 cup water
- 12 cloves garlic
- 1 tablespoon coconut oil
- 1/4 cup teriyaki coconut aminos
Sauce Ingredients:
- ¼ teaspoon ground ginger
- ¼ teaspoon ground garlic
- ½ tablespoon sriracha
- 1 tablespoon honey
- 8 ounces 2% or whole milk yogurt I used Plain Greek Maple HillGarnish: Trader Joe's everything but the bagel seasoning and sriracha for sriracha swirl in a dipping sauce.
Instructions
- Cook your artichokes, this isn’t as bad as you think! Watch the video to get the idea of how to trim and prepare them, but leave at least ½ inch of stem. I prepped mine in a similar fashion but I left the stem and cut them in half. I took a reader suggestion and stuffed garlic cloves randomly throughout the leaves. Then, instead of boiling/steaming them, I used my instant pot. You can do it, either way, you just need to get them tender before they go on the grill. For the instant pot, I added 1 cup of water and stuck them in a steamer basket. I set the instant pot to cook on high pressure for 20 minutes, I let them naturally release for 10 minutes then quick released the rest of the pressure. (I’ve never been able to let my instant pot natural release the full way, ever.)
- While your artichokes are cooking, preheat the grill to 550F. Once your artichokes are cooked remove them from the pot or instant pot. Scoop out the fuzz (the middle inedible portion). Mix together teriyaki sauce and coconut oil then brush the mix over the inside surface (the flat side) of the artichoke halves. Place on the grill for 3-5 minutes until you get crispy tips and nice grill marks.
- While your artichokes are grilling combine all the ingredients for the sauce.
- To be fancy you can serve the sauce inside the center of the artichokes but as you peel leaves off they will fall apart, which I didn’t mind but you may so you can do it on the side if you want!
