In a meal planning rut? In the past, I included what was on my meal plan, but nowadays I’m doing so much recipe development I hardly get the chance to remake anything. So, my meal plan ends up being a list of new recipes you won’t get until the following week or later, that isn’t helpful! So, I’ve decided to institute a Sunday series for your meal planning pleasure! It’s just five healthier dinner options to give you ideas on what to put on your meal plan! I’ve included one breakfast idea that you can easily meal prep and five dinner ideas. My thought is to use leftovers for lunch, happy Sunday meal prepping!

Breakfast Prep Idea
Black Forest Turkey Egg Cups
Prep one or two batches of these healthy egg muffins to eat all week.
Dinner Plan Ideas
Zucchini Noodle Lasagna
This one takes a little longer to prep, but will be a family favorite! Plan this on the night that you have the most amount of time. To make things go a bit faster, prep the zucchini noodles ahead of time. You can also prep the meat mixture ahead of time as well! Those steps will speed things up a quite a bit!
Sweet & Salty Salad
You can meal prep bacon and apples ahead of time along with the goat cheese dressings.
Thai Green Curry Burgers
Thai Green Curry burgers are easy and full of flavor, easy to make! Serve over salad or with finger veggies!
Vegetable Chip Flax Chicken
Another easy one, just make sure your chicken is defrosted!
Butternut Squash Soup
For those of you celebrating lent, this is a great light but filling soup for the fasting season.
