Today I have a fun little recipe for you that I’ve been loving lately, Pumpkin Maple Coffee Creamer.
Last Fall I mixed plain pumpkin, stevia, and almond into my iced coffee (I used the Trader Joe’s Pumpkin so it was already spiced) almost every day.  That worked for me, but looking back it was not the easiest thing to do.  This fall I thought I’d make it easier on myself and make a ready to go creamer.
I can’t believe I waited so long to try it, it’s seriously delicious! Could you buy it at the store?  Yes, but it wouldn’t be exactly to your preferred sweetness level and it would probably have a bunch of extra preservatives in it.  This is one of those easy to make things you’ll be glad you took the extra five minutes to make at home instead of buying!
I’ve been loving it in my iced coffee, but I’ve also tried it in my warm coffee since it’s finally getting cooler in Arizona and it was just as delicious! Â All I did was blend together the following ingredients:
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 2 cups unsweetened vanilla almond milk
- 1 tsp vanilla extract
- 5-7 drops of vanilla stevia
- 1T Maple Syrup
- 1tsp pumpkin pie spice
Store in a mason jar or airtight container for up to one week (if it lasts that long!) Â I used about 1/4 cup in my iced coffee and a little less in hot coffee. Â I like my coffee more strong than sweet so you could definitely add more sweetener to it if you like yours sweeter!
