After putting together this mornings post I was up late and I really didn’t feel like going through my usual routine of packing a breakfast and lunch. So I glanced through my freezer to see what I could throw in my lunch box with minimal effort. Green Chile and Cheese Breakfast burritos are always an option, but then I remembered this honey whole wheat bagel from Einsteins that I froze during Sugar Free September. I knew I had almond butter at work and a toaster, so that was breakfast! So worth the wait for Sugar Free September to be over!
As I was grabbing for a breakfast burrito to eat for lunch I saw this frozen meal I picked up randomly at TJ’s the other week. Score! I threw some carrots and snap peas in a bag and I was done in less than 5 minutes with no clean up.
Okay so the sodium is a bit high (like most frozen foods), but it’s okay to splurge every once in a while. The ingredients are all readable and recognizable so I’m a happy camper! One way to fight excess sodium is with potassium, so I see a green juice or maybe a green smoothie in my future to help balance things out a bit.
It didn’t look much like the picture on the box, but it was darn delicious! Tasted like a cheese enchilada… yeah so it was good!
Sometimes a frozen meal can save my but and keep me on the healthy track. I will definitely be buying this one again to keep as an emergency lunch! Now it’s back to work have a great rest of your day!
