In college during my freshman year, my FAVORITE breakfast was a tuxedo coffee and a giant blueberry muffin. Hello, sugar rush and crash, no wonder I took so many naps during college, well that and the hangovers. When I started watching my diet, I realized most muffins are LOADED with tons of not filling calories. I remember buying some Fiber One muffin mix thinking it was SO healthy for me. Never mind that refined sugar is the first ingredient followed by partially hydrogenated oil (read trans fat) plus a ton of chemicals and preservatives. Not exactly what I would call healthy, but at least there was some portion control.
Now, when the craving for muffins strikes I thankfully don’t have to rely on a box. I love whipping up a new recipe and creating something with filling nutritious ingredients. Over the years I’ve accumulated several healthy muffin recipes for both kids and adults! Also, I thought this would be the perfect time because, in Arizona, most kids start school this month! Probably uncoincidentally, August is also National Kids Eat Right Month (KER). Kids love muffins (even I know that) and they can be a super convenient healthy life saver for you or for the kiddos during the busy week. Add them as part of the healthy carb for breakfast or an energizing snack, they can even be a dessert!

I’m totally trying the banana chocolate chip muffins! My daughter used to love bananas, but no more. I’ve had to start hiding the healthy stuff and cover it in chocolate. 🙂

Let me know how it goes! Those ones aren’t super banana tasting so a good way to add them for sure! The coconut oil banana muffins on the other hand taste A TON like bananas!
