Want a cookie healthy enough to eat for breakfast? Ask and you shall receive, I made these with leftover sweet potato from my sweet potato pancakes and they were DELICIOUS!
They were so good that Mr. Hungry ate most of them and he HATES sweet potato. So I ended up making him a second batch, with chocolate chips of course 😉 The one’s I managed to get before he ate most of them were addicting though!
I figured they would make a great addition for our team breakfast, but when I made them in large scale with vegan protein powder they were a little darker and moister than the first batch I made. I also added flax in the batch I brought for work, moral of the story…. don’t fix what isn’t broken! I made the original recipe again for Mr. Hungry with the addition of chocolate chips and they were great.
So unless you are going to add chocolate, don’t fix what isn’t broken right? Speaking of our team breakfast, in the fitness industry the last day of the month is crazyness as we close out the month.
I either end up not eating near enough or eating way too much all day. It’s never perfect but it all balances out in the end. Tons of protein and pizza (multiply the pizza shown by like a billion and that’s probably how much I ate) and not enough veggies was the name of the game yesterday. (note the smaller dense sweet potato cookie, stick with the original recipe and you get bright orange wonderfulness, make modifications and risk reindeer poop cookies, which of course I still liked anyway)
Then when I got home at 10 pm, so make that 16 hours of work…. I, of course, wanted something sweet. It’s hard not to indulge after a stressful day, but I try to keep it to a minimum and get to the task at hand… like finishing up this post!
When days like this happen I don’t sweat it, it’s once a month at most. I just get back on the track the next day, not necessarily with the lowest calorie day ever, but focus more on eating tons of vegetable to make up for my crazy low intake the day before. Sweet Potato Sun Butter Cookies
Ingredients
- 1 large sweet potato about a 1 cup mashed
- 1/2 cup sunflower seed butter
- 1 scoop vanilla protein powder
- 1 egg
- 1/2 cup add ins (chocolate chips, coconut flakes, etc...)
Instructions
- Preheat oven to 350F
- Mix all ingredients except add ins until batter is a smooth consistency (a few sweet potato chunks aren't bad but keep it as smooth as possible.) Divide batter by tablespoons onto a cookie sheet lined with parchment paper.
- Bake for 15-17 minutes and let cool for at least 10 minutes.
