Happy Monday out there! Today I have a quick and easy bean dip recipe that can quickly feed a hungry crowd for any Monday night football get together. I made this on Sunday for the hubby and his friends and they DEVOURED it! It’s great because it’s easy to make and is a healthy crowd pleaser!
Ingredients:
Here is what you need to make it:
- 1 can of refried beans (look for fat free versions that do not have have any partially hydrogenated oil or lard in them)
- 3/4cup of your favorite salsa
- 1 container (5.3 ounces) of plain non fat greek yogurt
- 1 avocado
- 1/2 cup shredded cheese of choice
- 1 green onion, sliced
- 1/4 cup chopped cilantro
Directions
Using a pie dish or other similar sized dish begin to layer the ingredients. I did beans, then salsa, then green yogurt, then green onions. Since greek yogurt in place of sour cream can be a bit of an acquired taste I like to mix it in with the salsa (this the 1.5 layers). If you want your dip to be more layered (or have four distinct layers) then add the greek yogurt on top of the beans before the salsa. You may have to use two containers since you will need to cover more area.
After that I topped with shredded cheese, chopped avocado and chopped cilantro. It was easy to make, fed a bunch of guys, was super healthy and taste amazing!
My avocado’s weren’t the freshest but it was definitely the best way to use them up! Hope you have a great Monday!
