OH. MY. GOSH. It’s been forever since I disappeared right??? I promise I had a good reason, I took the RD Exam on Thursday and passed! So in case you didn’t hear on twitter or instagram, I am officially an Registered Dietitian! It’s been a long time coming and I’m excited to share my full story here on hungry hobby VERY soon, as well as tips for passing the exam and other random tidbits. Anyways, I promise to never fully disappear for a full week again, I have a lot of posts planned for the upcoming couple of weeks and some on the Que for when we are in Hawaii on our honeymoon! Once I passed the exam the reality set in, we are THREE weeks away from the wedding! Then I realized I’m only one week away from my half marathon! I can’t believe either of those realities. Well, one good thing is that my last long training run went pretty decent this morning. I started with some Eziekel cinnamon raisin toast with almond butter before I headed to the Scottsdale Greenbelt.
I had an interesting pain in my foot the first 6 miles until I tightened my shoe laces. Tightening the shoe laces seem to mask the problem more than solve it so usually I would have quit and let it heal. Being so close to the race though I needed to know that I could run the 12 miles, that my body was physically able. I definitely did run the whole 12 miles (minus my little mental walking water breaks) but I hope I didn’t do any damage that will prevent me from running this weekend, that would suck. I’ll keep the training light this week and hope for the best.
Up until mile 9 I listen to NPR’s Podcast of Wait, Wait… Don’t Tell Me, which helps me pace myself slower so that the run isn’t miserable. Then I switched to music for the last three miles, I am definitely going to have to make a playlist for the actual event. Probably should have done that already, WHOOPS!
Anyway, here I am drenched in sweat post 12 mile run, I already took off my shoes so I told Paul not to get my feet in the picture. Once I saw the pictures I realized that made them look really awkward, like I had no feet, again… WHOOPS.
I followed up with a pumpkin protein smoothie (but didn’t have any spinach to put in it)
I know I said I was done drinking those but I guess I was wrong! They are just so perfect when your all hot and sticky post run, plus temperature here shot back up to 91 so smoothies are still appropriate.
Meal Ideas
So I haven’t exactly been to the grocery store yet so I don’t have grocery store pictures to show you but I do have plans in mind. Here is what is on the tentative plan:
Breakfast Options
Strawberry O’s Cereal
Eziekel Cinnamon Raisin Bread Toast
Oatmeal
Pumpkin Pie Breakfast Scramble
Cinnamon Apple Quinoa Bars (which I am of course planning to pumpkinfy)
Lunch Options
Turkey or Chicken Salads/Pitas/Wraps
Dinner Options
Monday- Cauliflower Fried Rice with Shrimp
Tuesday- Spaghetti Squash Crusted Quiche (modified to be without red meat)
Wednesday- Leftovers
Thursday- Mahi Burgers
Friday- Wing it
Saturday- Quesadillas or Mini Pizzas
So it is kind of a week meal plan because I didn’t use my typical meal planning process I kind of condensed it because I didn’t really have time last week to scour the web for new recipe ideas. Instead I wrote a couple down I had seen that I hadn’t had a chance to make and combined that with what is in the fridge.
That’s it! I am so glad to be back and so glad to finally be an RD! I hope everyone has a great week!
