Wednesday already? Okay, I’ll take it! This week is moving right along pretty nicely, just the way I like it! Except this morning I found the shredded carrots in the pantry (a bit warm) and beans in the nut/baking drawer, and I missed my exit on the freeway. Let’s hope the rule of 3 applies and that is it for the day!
As you guys know, usually I like to recap my weekly eats because I think it shows a variety of what I eat on a daily basis, but to be honest when I’m reading a blog I enjoy the “whole day of eats format.” They (I don’t know who “they” are) say write what you would want to read, so for this week we will switch back to the daily format. Sound good? Okay then let’s get started…

Last week, Wednesday morning started with the last few sips of kombucha…
Followed by a DIY Frozen Green Chile Breakfast Burrito around 8:30am. I seriously love how portable they are and delicious every single time. It’s totally worth the hour to make them for like 3 months of on the go breakfast options.
Around 11am I had a handful of pistachios, which I pretty much do every single day.
This day was kind of weird, I had a lot on my mind and I didn’t really feel hungry. Luckily there is a Whole Foods down the street from my work. I spent the whole lunch hour walking around the store sipping on a green juice #lifeofadietitian.
My Whole Food therapy session actually cheered me right up and I was ready for lunch when I got back to the office.
Chicken Sausage and greens, which was actually the first time I’ve ever had that combo. For some reason I never thought to put chicken sausage on a salad, but I swear pretty much everything can. It was a delicious combination with bbq ranch for dressing (I mixed BBQ sauce with Walden Farms ranch dressing.) After another handful of pistachios I got back to work for the afternoon.
After work the plan was to go for a run, but my hips and SI joint were really feeling my strength session from the day before. So I went for a slow and sore 20 minute walk, which was nice but I can’t say I wasn’t irritated. My run on Thursday morning was pretty amazing though, so it was all worth it. If I get to chose, I’d much rather run in the morning anyway! When Mr. Hungry got home we headed down to the HOA pool and soaked in the hot tub for 15 minutes. That made me feel 1000 percent better.
For dinner I stuck to our meal plan and made a new dish, Paleo Chorizo Cauliflower Fried Rice (using this recipe), I loved it and will definitely be making it more in the future!
There were a few bites of peanut butter ice cream pie left in the fridge from Father’s Day that I had for dessert. Not this big of a piece (there wasn’t that much left), but just so there is a picture…
Actually I just ate the ice cream and Paul ate the crust, because apparently we are a dessert devouring team.

Ok, so I need to soak in that hot tub! Please?? I’ve been walking 4 miles a day and did Zumba Monday night. Ok so it’s only been two days, but I’m old! Is 37 old? I think so. And Chicken Sausage can go on everything. Even ice cream. I’m sure of it. No I’m not! I will not even discuss the Peanut Butter Ice Cream Pie, it’s too hurtful! I’m on NO sweets. So hard on myself. I love it! Happy Wednesday!
