Hello friends! Welcome to another round of weeknight dinners! You guys said you like these posts in your comments on my blogiversary post! I love this back-to-my-roots real lifestyle of blogging as well, so let’s get to it!
Monday – In and Out
Monday evening, we left my in-laws later than I had planned, and so I pivoted for dinner and headed through the drive-thru. I was starving and knew the baby would need to nurse the minute I walked in the door, so I ate my double meat protein-style sandwich on the way home (can’t have dairy for nursing the baby.) I also snacked on some of the kid’s french fries. The kids ate french fries and burger patties (no bun, no anything else).
Tuesday – Costco Chicken and Broccoli Salad
Tuesday night, I made the Yuccan Pre-Marinated Chicken Thighs from Costco in the Air Fryer and served it with broccoli salad from Costco.
Broccoli Salad Tip: I use one dressing pack for all the broccoli (there are two packs of broccoli and two of dressing.) I swap out the cashew/raisin pack for a handful of cashews and cranberries (so that the dog doesn’t accidentally eat raisins.)
The kids ate the cranberries, and KK drank milk. They didn’t touch anything else on their plate.
Wednesday – Salmon Burgers & Broccoli Salad Leftovers
We ate the leftover broccoli salad with salmon burgers (from Costco) and pre-cooked brown rice.
The kids ate strawberries, and KK drank milk.
I’d be lying if I said I wasn’t frustrated by the fact that the kids didn’t eat their salmon burgers. It used to be a favorite of theirs, but I had a hard time cooking it while pregnant (the smell), and now it’s like they’ve never seen it before. I know it’s not my fault, but it’s still frustrating.
Thursday – Carnitas Bowls
On Thursday, I made my slow cooker carnitas, which I served over cauliflower rice with guac and dairy-free sour cream. (Mr. Hungry got to eat cheese in his bowl.)
And the kid’s plates included carnitas, guac, plantain chips, and cauliflower rice.
KK drank milk and didn’t touch anything else. Kal ate carnitas meat and a few chips.
Friday – Carnitas Plate
Ran out of cauliflower rice, so we made plates with the leftover carnitas meat. Kids also got a cheese stick on their plates.
That’s it! Over the last few weeks, KK had entered a very picky stage. But, one interesting thing that happened is that we bought the all-natural fruit rolls from Costco, and initially, KK didn’t like them. For two days in a row, I watched him try them multiple times and spit them out until, finally, he decided he liked them. I think KJ was so into it that KK really wanted to be into it too, but initially did not like the taste. That experience really taught me the power of family meals. Nobody pressured KK to keep trying the fruit rolls, but he really wanted to like what his brother liked. I could see the same thing happening at mealtime down the road, but who knows?
