It’s almost Fourth of July!!!!! Have I mentioned how much I love Fourth of July before? Probably only a dozen times or so, it’s just the best holiday ever. There is something about the summer holidays that make them so light hearted and fun, right? What’s better than spending a weekend being thankful you live in this country, surrounded by sun, family, friends and good food. Doesn’t get much better than that for me! Sadly I don’t have anything in my arsenal of recipes that is beautifully red, white, and blue crafted. However, I do have a delicious but mostly healthy Fourth of July recipe round up from the Hungry Hobby Kitchen with must haves at any cook up this weekend!
Sneaky Lightened Up Guacamole (vegan, gf)
Everyone will love this Sneaky Lightened Up Guacamole dip, it’s sure to be a crowd pleaser! No one will suspect it has sneaky ingredients that pack a flavor punch and lighten this classic up a bit!
Mini Pizza Quinoa Quiches (vegetarian, gf)
These Mini Pizza Quinoa Quiches are as cute as they are delicious and a pleasing appetizer for just about anyone! Make a bunch though because they will go quick!
Cheesy Quinoa Pizza Bites (vegetarian, gf)
My Cheesy Quinoa Pizza Bites are basically the same as the mini quiches, just a little less eggy, perfect for dunking in marinara sauce!
Lightened Up Spinach Artichoke Dip (vegetarian, gf)
This Lightened Up Spinach Artichoke Dip recipe is super simple and easy to whip together in a hurry, faster than you could run to Costco and buy theirs…. probably …maybe… it will taste better and be much healthier though!
Grilled Eggplant (vg, gf)
Grilled eggplant is a simply delicious and filling side dish for any grilling party. As a bonus, it also works as a meat substitute for any vegetarian guests you may have!
Grilled Brussel Sprouts (vg, gf)
Grilled Brussel Sprouts take on the smokey sweet mesquite flavor of the grill like no other vegetable. The grill masks the normally pungent smell they give off and instead brings out their natural sweetness. Totally different from any other method of cooking them, grilling them is a whole other delicious way to enjoy them.
These Jalapeno Cheddar Turkey Burgers are by far my favorite burgers. Not only are they super juicy and moist like a burger is suppose to be, but they are packed with spicy and rich cheddar flavor. They are absolutely delicious and perfect for any grill up!
Takes a mouthful to say but only 10 minutes to prep and they are good to go after a couple of hours in the fridge. My Grandma’s No Bake Peanut Butter Chocolate Oatmeal Cookies are the perfect cold treat for a hot summer Fourth of July party!
