This morning started with a batch of fruit parfait style refrigerator/overnight oats. I thought I would be sick of it since I basically had the same thing in my strawberry mango smoothie bowl the night before, but nope, so creamy, delicious, and filling it was a perfect start to the hump day!
For lunch I went for another Mediterranean vegetarian salad with a side of hummus and cucumbers. In this version I added a mix of garbanzo, red kidney beans and black beans (trying to avoid the black beans since they are not my favorite), marinated zucchini, squash, and broccoli, red quinoa, tomatoes, a sprinkle of feta and sunflower seeds. I didn’t love it as much as Monday’s salad with the strawberries, but the hummus was definitely a nice little treat.

The hospital is hosting a company called masquerade who is having a $5.00 jewelry sale in the cafeteria for the next three days!
I wanted to get some really fun accessories but ended up with cute stuff, but a little on the safe side. I got a turquoise bracelet which I love because it actually fits my super tiny wrists and some sparkly earrings!
They will be there two more days so there is still time to try and get something a little more flashy!

I’ve never heard of those make-ahead yogurt parfaits, but that sounds wonderful. I may have to start doing that!
