I’m excited for Friday because it ends my solo parenting for the week. Mr. Hungry was gone all week on a work trip and I’m so ready to be home and have some help at bedtime.
I started this post last week and then totally forgot to publish it. We jumped into to family time Friday afternoon and stayed mostly offline. I had planned to review this post one more time and then publish Friday night, but I forgot because we kicked off the weekend with taking the kids to get ice cream and pizza. We finally have two kids who like pizza! KJ and baby girl, KK still thinks it’s poison. On Saturday we had KJ’s first basketball game, afterward we went to the park to feed the baby ducks. Sunday we went to the zoo so it was a busy weekend! This weekend we have family in town so it will be another busy and fun filled weekend. Actually, I let KJ play hookie from preschool today to go to the Zoo with his cousins. We have just a few weeks left of nice weather left in Arizona and everyone is soaking it up!

Chocolate Dipped Strawberries
Mr. Hungry ordered Chocolate Dipped Strawberries for Mr. Hungry’s parents anniversary and they were so nice looking (and tasting!) I thought I’d share here in case anyone is looking for spring birthday, anniversary, Mother’s Day ideas! PS Yes, I make Mr. Hungry figure out his parents anniversary gifts on his own most years. I got a lot on my plate, I’m a firm believer that he can rise to the occasion of handling his own parents gifts. I do remind him a couple times when I think of it though because we are a team and gift giving is neither of our love languages so we both can find it challenging. Gifts stress me out ha ha
Real Good – Chicken Tenders from Costco
These Real Good brand chicken tenders from Costco are so freaking delicious! We used to get Butcher Box Chicken Tenders or sometimes I make my own (with no breading) in the Air Fryer, but the Butcher Box ones kept coming partially defrosted (I think because they put them on the top of the box) and sometimes I’m lazy on making my own. These Real Good brand from Costco are new and I really hoping they bring them back on a regular basis because they are delicious. I love that they are coated with chickpea flour because I struggle to get beans in my diet, so anyway I can eat them alternatively – hummus, chickpea pasta, chickpea flour etc I do!
Shrimp Cauliflower Rice
I made the shrimp fried rice from Paleo Running Mama and it was delicious! Added siracha to mine, always.
Workouts
This past few weeks of workouts have been lame. At least I’ve been able to get back to walking while doing trainings in the morning (most recently I’ve been doing a hormone training on perimenopause and menopause), but my neck has been jacked up. Last week it was my foot, then my neck, and then my other foot. Would love to get past these nagging aches and pains. I think my cycle coming back and current stress levels are playing a role. Someone requested a home gym tour and it’s still on my content plan! I’m hoping to post it next week!
This week I got a run and a quick HIIT workout in, plus a couple of walks. Might have to hit up the Chiro again next week to take care of the neck issue.
