So I wasn’t going to share today’s post because when I looked at the meals I had recorded and saved from a random week this month, they felt not that exciting. But to be honest, meals a pretty simple right now as for the last few weeks, I haven’t been able to stand that long due to pelvic pain.
Anyways, KJ (four years old) has pretty much stopped drinking milk with meals. A while ago, I noticed he hadn’t drunk any for a few meals. Then I went to smell the milk and realized it was bad. I’ll never know why the kid never said anything, but now he refuses milk altogether unless it’s chocolate milk. I pretty much stopped serving it at mealtime to him. But that used to be my go-to. If he didn’t like dinner, he would at least have a glass of milk. Luckily, it hasn’t been too much of an issue because he eats just about any protein served as long as it’s plain. But I’ve definitely started to wonder if he’s getting enough calcium since he doesn’t eat yogurt either, something to bounce off his pediatrician the next time we see him.
KK (22 months old) still drinks milk and is still pretty willing to try at least most of the food on his plate and then announce whether he likes it or not. As long as there is some sort of carb on his plate, I can bet he will eat something for dinner.
I included what the kids ate each night because when I see other bloggers recaps, my first question is, “omg, did their kids eat that?” My kids are pretty good at understanding that what is served for dinner is what is for dinner. I’m also pretty good and creating meals with at least one acceptable thing on their plate, even if that’s fruit or milk. Our plates don’t always look perfectly the same, but they are very similar and stick to a general theme of the meal. So that’s how we do it here because I honestly give myself 40 minutes to finish dinner max, I don’t have time to cook multiple meals, nor do I care. I know some parents don’t mind, but I don’t have the time. I come down, and the sitter leaves at 5 pm. Kids eat between 530 and 6 pm, depending on if Mr. Hungry baths them before or after dinner. Sometimes, the kids eat fruit and milk for dinner because they like anything else served. It’s not a big deal in my mind. That’s just how it is.

Monday and Tuesday
I combined two recipes. I used the shredded chicken recipe from America’s Test Kitchen Slow Cooker Revolution and then turned it into an enchilada casserole, all in the slow cooker! I combined the enchilada casserole with taco-flavored cauliflower rice (cook cauliflower rice and sprinkle it with taco seasoning) for a delicious taco bowl-type recipe.
For the kids, I put a little enchilada bake and a little cauliflower rice, made them cheese quesadillas, and some oranges to eat. They ate the fruit, and quesadillas, drank milk, and that was it. Nobody was brave enough to try casserole.
Wednesday
We ate ButcherBox Italian Sausage cooked I’m the air fryer, Ceasar Salad Pack, and Annies Mac and Cheese.
The kids were served the same thing in smaller portions. KK mostly just ate mac and cheese and drank milk. KJ mostly ate sausage. They also ate apple slices.
Thursday
On Thursday, I made my go-to wings in the air fryer paired with another salad pack, Primal Kitchen ranch, and a cheddar biscuit (yes, the Red Lobster ones they sell at Costco.)
Somehow the wings came out much more spicy than usual, so the kids ate leftovers for dinner. Some sausage was still left, and KK was all about the biscuits. They also had apple slices too.
Friday
Friday night, we picked up a fish fry from our local church.
KK loved all the food and drank milk. KJ loved the french fries but nothing else, so we let him eat the eggs he had left from lunch or breakfast (can’t remember.)

April Meal Plan
Moving forward, I’ll be using Hungryroot until I deliver. I can’t stand long enough to shoot any more recipes (more on maternity leave in tomorrow’s post.) So I’ll try to record one more of these before the baby girl appears, but it will likely be all Hungryroot meals.
