Happy almost Friday everyone! Today was crazy crazy crazy busy like pretty much every other day this week. It started kind of hectic because we took my car into the shop so I had to drop Paul off at work and we were running a little late because I of course prioritized making the morning green juice.
After I got to work and got squared away I made sure to eat breakfast before the day got to hectic. I was super excited (and kind of nervous) to try the DIY Starbucks Feta Wrap Remake I made last weekend. IT WAS INSANELY DELICIOUS I CAN NOT WAIT TO SHARE THE RECIPE! I brought non fat greek yogurt mixed with some leftover green chiles I had in the fridge (from my Shrimp and Black Bean Mexican Lasagna) to dip the wrap in and that made it even better. I will definitely be making a whole bunch more of these this weekend, total success! (Working on the recipe post, will share soon!)
First bite and every bite was delicious, of course I had my dark roast coffee with a splash of egg nog like every other morning too.
Around 11am my stomach started aching for something so I ate a pear, they are in season right now so I feel like they are extra delicious and I’m extra obsessed.
Lunch was a couple hours later and eaten in 10 minutes flat. I hate rushed lunches (or rushed any meal) but it was pretty delicious and satisfying. I made a Spinach salad (all our Romaine went bad) with 1/2 sweet potato, goat cheese, cinnamon sugar garbanzo beans, and 2 dates. I actually am not a huge fan of raw spinach (unless its in a smoothie), so I heated it up for one minute to wilt it. Success, I loved it!
I also ate the rest of the pistachios (10-15) I had at my desk and when I drove home I snacked on the rest of carrots I had in my lunch box.
I was torn on what to do as I sat in the car and waited for Paul to get off work, crossfit or no crossfit? I was pretty sore from the last two days but I knew there was a good chance I wouldn’t be able to work out tomorrow. Ultimately I decided to skip it because I knew that I really needed the recovery time and I needed to deal with that whether it met the demands of my schedule or not. Paul and I tag teamed devouring cinnamon sugar almonds when we got home, and making dinner.
For dinner we had mahi mahi and Rosemary Feta Asparagus, it was a good one! I also had a glass of wine with frozen grapes that I enjoyed throughout dinner and while I finished this post! I felt like this week was crazy and I needed to unwind a little bit!!!!
Is anyone else INSANELY ready for Friday? I know I am!
