Hello hello friends and happy humpday, the middle of the week doesn't feel so bad when you know a three day weekend is coming up right???? Given the crazy amount of green smoothies I had for dinner last week, I thought I would do a day recap for this WIAWRD edition, instead of the whole weeks meals like usual. So, here it goes....

Yesterday started dark and early at 4:15am with a 55 minute yoga sesh that focused on hips, hams, and the heart center. It was a good one and it definitely left me feeling more open and a little sore. After that I headed downstairs to make some rejuvenating green juice (recipe link).
I ended up adding another cucumber to this batch to make it go a little farther. I poured half in a mason jar for Mr. Hungry and put it in front of his lunch. Usually I tell him when I make juice, but I figured he'd see it. Somehow he missed it, so in the fridge is where I found it when I got home. Oh well, you win some you lose some right? I poured the other half in a starbucks cup I saved from a iced green tea I picked up a couple of days ago and drank it on the way to work. Re-use and reduce!
Yoga and Green Juice? I must say I felt pretty zen on my drive to work, that commute couldn't touch my good mood yesterday. When I got to work I snacked on a tiny bit of an egg and cheese croissant that was leftover from our company meeting the day before. (I had a half for breakfast and a half for lunch on Monday, but still had a little leftover.)
For some reason I used to hate croissants but lately I'm in love, I find myself dreaming of this exact sandwich pretty often. I would eat it every day for breakfast if I could... unfortunately croissants don't exactly top the nutrition charts though. So I save it for a coveted treat that I thoroughly enjoy when I do get it! Little while later (around 9:00am) I dug into my vanilla chia protein pudding topped with a half of banana (picture taken at home.)
I meant to put the quinoa granola (recipe link) I brought in the pudding, but totally forgot so I just snacked on it plain. It's so good it doesn't even need to be in something.
That held me over WAY longer than I expected, I was working away and didn't start to feel hungry till way past traditional lunch hour. I didn't end up eating lunch until around 3pm. Once I felt hungry though, I felt REALLY hungry.. I dug into my salad stat.
Pretty plain and typical for my daily lunch - chicken tenders, handful of sliced grapes, goat cheese, with Walden Farms balsamic dressing. I also had some carrots (recycled photo).
A little while after I got home I started dinner because I knew it would take a while to cook, even though I had pre prepped some of it. On Monday night I microwaved a spaghetti squash so it would be good to go for Tuesday. I reheated it for 3 minutes (so it wouldn't be super cold) and squeezed it of excess water (having it sit seems to make it more watery somehow.) Then I used it to make a Spaghetti Squash Crusted Quiche from PaeloOMG. (Modifications: I used chicken breakfast sausage instead of pork, 3 eggs and ¾ cup egg whites instead of 6 eggs, and ½ chopped onion and 1 chopped leak instead of mushrooms.) Eaten with lots of ketchup and chula hot sauce.... delicious!
This is pretty much the only way that I can get Mr. Hungry excited about spaghetti squash nowadays... otherwise he can't stand it. For dessert I tried out this ice cream I found at Sprouts...
It was good, but kind of light in flavor. I had about ¼ of the container which is 36 calories according to the back, but I wasn't satisfied till I had two bites of Mr. Hungry's chocolate chip ice cream sandwich. Sometimes life is too short for diet foods, but I had to give it a try!
It actually kind of got me thinking about the recent studies that have found that diet coke drinkers may not be any thinner than regular coke drinkers. At first that kind of surprised me, but then I started thinking. I know a ton of very healthy and thin people that enjoy regular soda on the occasion. That's just it, they enjoy it on the occasion and drink maybe a half of a can. They don't fill up a 32 ouncer and chug it all day long. I think it comes down to having things you really want in moderation (like croissant sandwiches), and not denying yourself the good things in life.
