Another Dessert for Breakfast: Peach Cobbler Chia Protein Pudding
This morning started with a bowl of Peach Cobbler Chia Protein Pudding… mmmm I love dessert for breakfast if you haven’t noticed 😉
To make it I threw together the following ingredients in a bowl, whisked away, and stuck it in the refrigerator to let the chia work it’s magic.
– 1 cup unsweetened vanilla almond milk
– 1/4 cup chia seeds
– 1 scoop vanilla protein powder
– 1/4-1/2 tsp of cinnamon
– about 6 drops of stevia
Then this morning I topped it with a fresh sliced peach and pumpkin granola. It reminded me so much of peach cobbler.
Heres the stats (without granola or a peach) for 1 serving (makes 2)… dessert nutritious enough for breakfast!
In other news, today for lunch I chose salmon with a supposed asian glaze and summer squash. It was pretty good but I was hungry like an hour later so I ate a trail mix bar I stashed in my locker!
Now I’m off to try and get a good at home workout in, dinner, and finish some work for my internship! Let me know if you try the pudding!

I got it at Sprouts while I was in Phoenix out of their bulk section 🙂
