Seriously, I’m loving having all sorts of things to do with KJ outside. From the sprinklers to the water table his grandparents got him, to the pool. It’s just plain fun. I’m sure it will wear off and heat will get old, but for now, it’s just some good fun!

Food
I made some fresh-squeezed lemonade from our tree. And no, it wasn’t low sugar, half-sugar, fake sugar, it was just plain old fashion lemonade like Grandma made.
And yes, I let KJ have some. He did help squeeze the lemons after all. Would I buy juice on the regular for my family? No, but this is a once a year treat, we enjoy it and move on. BTW I gave him 1/3 of a sippy cup, and he didn’t even finish it. I didn’t make a big deal about it. I just gave it to him like it was regular food. He liked it, but then was done with it.
I also used the juicer to juice some Costco limes I bought. I’d like to say this was Cinco De Mayo, but it was a few days before. I forgot to take a picture of my margs on Cinco De Mayo, so this will have to do!
I also forgot to take a picture of our meal, but here were the leftovers the day after! Chipotle Chicken (Mr. Hungry has been eating the Beef Carnitas because the chicken is too spicy for him) with the taco flavored cauliflower rice. Taco seasoning on cauliflower rice, nothing fancy.
And it Cinco De Mayo wouldn’t be complete without the morning after Einstein’s Egg Sandwich hangover cure. Okay, I wasn’t hungover, but it’s tradition. PS they have curbside pick up now on their mobile app, and it’s super easy! I’ll be getting more egg sandwiches for sure! YUM!
I also played with my new toy this week! At Mr. Hungry’s request, we started with sweet potato fries. We had two old sweet potatoes left, so I thought it’d be the perfect thing to do with them!
Ate alongside some steam in the bag frozen asparagus and chicken sausages.
But the best thing is how it cooks green beans FROM FROZEN. IT’S THE BEST! I might have had a freak out about mushy green beans, and how it’s all quarantine’s fault and cue break down. Problem solved with the air fryer! Although obviously, my freak out about my disdain for mushy green beans was not totally about the green beans, I do feel better now that I don’t have to eat said mushy green beans. K, I’m done.

There was also this sourdough pizza win. While my sourdough bread FAILED HARD, this pizza worked out just fine! More on my sourdough adventures in another post, though! They deserve a full chronicle.
And of course, everyone is on the smoothie box smoothie train. I’m drinking one right now as I type this up!
I ordered the low carb Forefathers Cheesesteak Bowl for the first time, I mean, it was good, but I think “bowl” was a generous description, more just like a serving of meat. Delicious though, I wasn’t complaining. Note the grapefruit vodka drink to the side.
This week I also made some turmeric lemon chicken thighs from this week’s WTE? Meal Plan subscription with a side of stir fry veggies.
And then there was my attempt at trying to use up the remainder of my eggs with a baking marathon last weekend. I started by making a cauliflower rice quiche (like this one, but I added a ton of cheese.)
And Honey Oat Bread as muffins – I’ll share the modifications soon, but the big thing is shorter baking time!
And whole wheat blueberry muffins, without the crumb topping or zucchini.

Fitness
I did three pull-ups in a row, and I’m irrationally proud. That is all.
