Since today is Yoga day I took it easy and skipped waking up extra early for a workout. Instead I woke up when Paul did and helped him get going by making him breakfast, lunch, and green tea. I kind of feel like we are playing house and I’m going to enjoy that feeling because I know it sure doesn’t last forever! After Paul was off to work I poured myself a bowl of cinnamon puffins and peaches with unsweetened vanilla almond milk. So good can be so simple.
After that I headed off to the chiropractor (who is a good family friend.) Remember the “weird neck pain” I was complaining about while back? It was so weird, I’d take a deep breath in and have pain in my neck. At student health they told me they had no idea what was wrong and to come back in a couple of weeks. One call to Dr. Boardman and he pretty much had it figured out just from talking to me on the phone. Turns out I’ve got a very unhappy muscle hanging out on the side of my neck, especially at the attachment site behind my ear (not even gonna try with the names of the muscles.) When I was at my internship in Palm Desert I decided to wait it out instead of seeing a chiropractor there. So now it will be multiple trips a week and lots of ice to get things back in order.
After a morning filled with hazelnut coffee, guest list review, and wedding invitation design with my amazing future mother in law, it was time for lunch. After discovering we don’t have any legitimate salad bowls, I found a plastic container and got to it. I made a spinach and romaine salad with turkey, strawberries, quinoa, and sliced almonds. Yesterday’s mini food prep totally helped this salad come together so much faster!
For dressing I used Walden Farms Balsamic Vinaigrette I picked up at Sprouts. I love it because it actually taste good and it’s “Calorie Free” (which just means less than 5 Calories per serving.) Since it’s fat free, sometimes I mix it with a tsp of olive oil, just depends on what else is in my salad. I usually add the olive oil if there is no cheese or nuts to provide fat which helps the body absorb all the fat soluble vitamins A, D, E and K found in the veggies. I know it’s a dietitian thing, totally over thinking ever meal.
After icing my neck and checking more off the to do list I sat down to blog and have a snack of sugar snap peas and carrots with hummus.
Tonights agenda includes yoga, cleaning, unpacking, organizing, and spicy chicken tacos! Hope you have a good evening!
