Yesterday’s advent jar we may have cheated and drew a couple times until we found one that wouldn’t require us to leave home since Paul is feeling a little under the weather. We got/decided upon “Make a top 10 list about your relationship,” here is what we came up with:
This morning I wrestled with myself at 4am… get up or don’t get up? To be honest I wanted to get up and workout but was concerned about starting the week with less than 6 hours of sleep. I vowed to get more sleep tonight (famous last words) and headed to the gym. Following my workout schedule I created last week I did a 5 mile run.
You know when people say “this workout made the time fly by” then you do the workout and you didn’t quite have the same experience? Ya that happens to me all the time, hopefully that means I’m challenging myself right? Anyways, for me, the 5 minute intervals dragged on but then once each interval was done I was 5 minutes closer which made it feel like it when by fast. I was definitely a hot sweaty mess, I’m going to workout pushing those 8 minute intervals farther, my goal is 5 minutes…..
After the gym I chugged a protein shake (one scoop powder, 6 ounces of almond milk, 1 tbsp. pumpkin) and got ready for work.
As usual I packed my breakfast and lunch the night before, but this morning I got a chance to try out my new coffee pot we got with gift cards we received from the wedding. Check out this bad boy, loved the auto program and single serve features. No more plugging in the coffee pot in the morning, no more washing the coffee pot, just a perfect grab and go cup every day. I drank it while I sat in traffic which was backed up from a semi stalling, thank goodness for google maps. It took me off the freeway and rerouted me around the semi, seriously what did people do before GPS?
Acorn Squash and Nut Butter Breakfast
A little while after I got to work I heated up my breakfast of roasted acorn squash and nut butter. I roasted an acorn squash yesterday (cut in half bake cut side down on 350F for 25 minutes), then once it was cooled I topped it with 1/2 tablespoon brown sugar, sprinkled some cinnamon, a spoonful of pumpkin butter and a spoonful of almond butter. It was DELICIOUS! Definitely give this one a whirl for an easy make ahead, semi portable breakfast.
Around 11:30 I snacked on a pear while I got some more work done.
For lunch I was crazy hungry, like stomach pains hungry. This happens sometimes when I run in the mornings, I had my typical butternut squash salad (make that three servings of autumn squash for the day so far) with 3 slices of turkey, goat cheese, and pumpkin seeds. It was good especially since I accidentally switched the dressing which means I got caesar light and he got calorie free balsamic dressing. I haven’t had Caesar in so long, it was delicious… but a little hard on the stomach and we will leave it at that…
