Happy Humpday Friends! I started to add in pictures individually and then realized way to meals went unrecorded last week to put individual pictures in, that means it’s collage time!

Breakfast
All the usuals including DIY Green Chile and Cheese Frozen Breakfast Burritos, Protein Overnight Oats in a Sun Butter Jar, Starbucks Feta Wrap and Almond Butter/Banana Quesadilla!
Lunches
Not so usual lunches for me but all super delicious! This week proves I totally eat EVERYTHING I cook and do not just pass it off to my husband to eat. If I don’t love it, you won’t see the recipe on this blog you can be sure about that! Now I might be the only one that loves it, but that I can’t do anything about. If I like it someone somewhere out there might like it too right?
- Protein Pie Pumpkin Chia Pudding, pear, snap peas with Buffalo Butternut Squash “Hummus”
- Wings at a work baby shower
- Sweet Italian Chicken Stuffed Delicata Squash
- Lunch out with my Mommy! Salad with turkey, habenero jack cheese and honey mustard
Dinners
In the wise words of Arman “Fail. Bloody. Whale.” Cereal and smoothies more than half the week. The thing is that I’m so over cooking big meals, getting all excited for Mr. Hungry to come home and eat with me. Tuesdays and Thursdays he plays basketball so I snack and snack and snack waiting for him to get home. When he does he usual says, “he isn’t hungry.” UGH. So incredible irritating. So last week I didn’t wait and ate whatever I wanted when I wanted it. Apparently that included –
- Sweet Italian Chicken Stuffed Delicata Squash
- Green Smoothie
- Pumpkin Smoothie (Instagrammed that one, check it out here.)
- Puffins
Snacks
- blueberries microwaved for 30 seconds and topped with spoonful of peanut butter
- lots of pears from my farmbox!
- banana and almond butter
- mixed nuts
Saying Goodbye
Last night we went out to really fun but sad goodbye dinner with the Shallal’s. Sorry the picture is so blurry it was really dark in there! Our good friend neighbor Dan was with us too, but I’m not sure about how he feels about being on the blog so I didn’t use the picture with him it.
Dinner was simple but darn delicious, grilled chicken with rice,beans, guacamole and pico de gallo. I also helped Mr. Hungry finish his Marg since he wanted to play basketball after dinner. Brave, even I wouldn’t work out after all this Mexican Food! Oh yeah, and fried ice cream that totally happened too!
Plenty of leftovers for today’s lunch I’m excited! I’m not so excited about Mr. Hungry’s parents and sister moving to Northern California. I’ve barely been back from California for a year and now they MOVE there, figures right? Life is crazy that way. I’m looking at the positives though…. like how Northern California has a lot of wineries and how it will be fun to be their host when the come to visit. We already know they will be here Mid-December so that’s something to look forward too!

Everything looks delish! I have snacky meals when I don’t have someone to cook for as well. It’s just easier! I have to remember to eat my veggies though 🙂 We eat together about 5-6 nights a week.

PUFFINS! I haven’t had those in at least 15 years! SO GOOD as I can recall and I am sure they’re only better NOW with an improved formula of sorts! LOL!
