Kielbasa sausage has deep savory garlic flavor which adds a ton of flavor to this veggie-loaded kielbasa soup recipe! This recipe is super easy and PACKED with veggies!
So, I’ll be honest, my craving for soup that caught the tail end of my third trimester was totally out of character for me. First of all, it was 100 degrees outside, enough said. Second, I don’t typically love soup. I know I’m really selling this recipe for you, right?
The truth is though, this recipe is both packed with flavor and veggies. Thank God I had a craving for some kind of vegetable or baby would have just been built on hummus and pretzels.
The even weirder thing was, that I actually made this recipe on the normal stovetop. Not in the crockpot and not in my super trendy Instant Pot. I made it on the stove like soup has been made for centuries. I don’t know what came over me, I just grabbed the pot and added the onions and oil before I gave a second thought to pulling out my Instant Pot.
Cooking Kielbasa Soup
Next, I started slicing up the Kielbasa sausage. For this recipe, I used pork but I also bought turkey kielbasa sausage which went in my freezer version of this recipe that I will be testing and sharing! UPDATE: The turkey kielbasa is delicious in this recipe as well!
Then I added that to the soup pot to let it get nice and browned before adding in ALL THE VEGGIES.
Followed by broth and water, then I gave it a good stir and put the lid on. It was around this point I was thinking, wait a minute, wait a minute, wait a minute. WHY DIDN’T I USE MY INSTANT POT. I panicked thinking it was going to take forever to cook.
Turns out, after only 15-20 minutes it was totally done! At that point, all I had to do was add in the kale (I wanted to use collard greens but couldn’t find any pre-chopped) and my soup was ready to eat. That probably would have been similar to the Instant Pot by the time it came to pressure, cooked, and released. Heck, maybe even faster!
Now, for the freezer version, I made the IP will probably save loads of time cooking from frozen but we shall see! PS this recipe goes GREAT with some healthy cornbread! Yum yum!

Loaded Veggie Kielbasa Soup
Ingredients
- 1 tbsp avocado oil
- 1 yellow onion chopped
- 1 lb kielbasa sausage sliced, can sub turkey kielbasa sausage
- 3 cups carrots chopped or sliced
- 3 cups celery 1 stalk chopped
- 3 cloves garlic minced
- 3 cups sweet potato chopped (1 large)
- 4 cups broth vegetable or chicken
- 4 cups water
- 2-4 cups chopped kale or collard greens
- 1 cube bouillon optional
Instructions
Traditional Instructions:
- Saute onions in oil in the bottom of a very large soup pot. When onions are translucent and tender, then add the sausage and brown it.
- Add the carrots, celery, garlic, and sweet potato to the pot. Then pour the broth and water over the mixture and mix well.
- Boil for 15 minutes (or until sweet potatoes are tender) and then stir in the kale.
