I thought this would be the perfect time to share this easy marinade recipe, which comes from my Instant Pot Chipotle Chicken Tacos recipe.
I first tested using this recipe as a marinade almost a year ago for my chicken marinade challenge, since then I’ve made it dozens of times. It works great on the grill, in the oven, or using the slow cooker or instant pot for shredded tacos. I’m planning to make it today for Cinco De Mayo tomorrow, along with my beef carnitas recipe.
If you couldn’t tell, I LOVE chipotle flavored food.
The list of chipotle recipes on the blog is now quite extensive from sauces like my honey-chipotle sauce, creamy chipotle sauce, and BBQ chipotle sauce to full meals like my Honey Chipotle Wings, Stupid Easy Shrimp Tacos with Creamy Chipotle Sauce, and BBQ chipotle chicken salad I’m growing quite the collection, and I’m not mad about it.
I love the smokey heat that adding canned chipotle peppers in adobo sauce or chipotle chili pepper seasoning adds to any recipe. A little bit goes a long way, though! So despite using it all the time, I’ve barely made a dent in my chipotle chili powder seasoning. I am getting my money’s worth! And it’s a little less messy to use than chipotle peppers in adobo sauce.
All that being said, this marinade is my go-to chipotle recipe, so I wanted to share it separately from the taco recipe so that you know you can use it however you want. You can marinate it for 30 minutes to 24 hours and then bake, grill, or place in a slow cooker or pressure cooker. Or you can throw it together and freeze it for up to 3 months to use later! Either way, you’ll have delicious chipotle chicken when you are done!

Chipotle Chicken Marinade
Ingredients
- 2 lbs chicken breast or thighs
- 1 tsp salt
- 1 tbsp paprika
- 1/2 tsp dried oregano
- 1 tbsp chipotle chili powder
- 1/4 cup chicken broth
- 1/4 cup lime juice
- 1 white onion, chopped
- 2 garlic cloves, minced
- 1/4 cup avocado oil
Instructions
- Add garlic and onions to a freezer bag. Add in chicken broth and lime juice. Combine the spices in a small bowl or jar. Rub the spices evenly on each side of the chicken breasts.
- Place the chicken breast and remaining seasonings in the ziplock freezer bag.
- Keep in the fridge for 4-24 hours until you are ready to cook your chipotle chicken!
