When we woke up this morning we had the post honeymoon/vacation blues BIG TIME. I woke up a little late for the class I had planned so I quickly ate a chobani with granola.
After my quick and delicious breakfast (man it felt good to have a wholesome healthy breakfast) I headed to the gym for a class called coreblast which I had never been to before. The class used medicine balls most of the time and incorporated HIIT (high intensity interval training) like burpees and skaters, mixed in with core stabilizing exercises and lunges. Working out definitely raised my mood but it sadly wasn’t quite the sweaty but kicking I’d hoped for… oh well tomorrow is another day right?
After shopping at Sprouts, Trader Joe’s and Costco (sorry no pictures this week, up until an hour ago there was literally no room on our disaster dining room table to put anything) we hit up paradise bakery for lunch. Somewhere in the shopping marathon I had a mushy apple I found in the fridge.
I got a half classic cafe salad with added chicken and a half autumn squash soup. LOVE the autumn squash soup, I could eat that for breakfast, lunch, dinner, or dessert. So good!
As much as I loved the lunch I have to say I would have rather had something simple at home. However, Paul on the other hand is never excited about a meal unless it has some kind of main meat portion. So my suggestion of a quick meal like a garbanzo bean salad or quesadilla didn’t go well with him. Usually, if we don’t have any ready protein on hand (not counting beans or cheese in his eyes) I just make whatever I want and he either finds something or gets something out. Even though I was frustrated, today we compromised on paradise bakery since we were in a hurry. One week of marriage we’ve totally got this compromise thing down right? The autumn squash soup did help to lift my post vacation blues, and I think the cookie helped his!
After hours of more chores and errands Paul cooked up chicken for dinner and a bunch more to have with salad all week. I also microwaved a 3/4 a bag of spinach in our microwave steamer to have with our chicken. I seasoned it with garlic salt and lemon pepper.
Throw some precooked quinoa (comes in ready to go bowls at Costco, I keep in on reserve for emergencies), sun dried tomatoes and, presto, we had a delicious healthy meal!
Dessert was the rest of the jar of almond butter.
Goodbye Monday post vacation blues, hello short work week! Now the real challenge will be waking up at 4:30am like I have planned for my run… I love and hate to workout in the morning!
