Hi Friends! Happy Wednesday, I told you about short weeks didn’t I? The dragging feeling, I know you’ve got it too! Well I’ve got an easy delicious lunch or snack option to put a little pep in that step. This my new favorite combination: bell pepper sliced in half, smear with hummus, and top with rotisserie chicken. It’s the satisfying, refreshing crunch I need, right when I need it. It’s funny, I think my clients naturally assume I’m a vegetable monster, but I struggle like everyone else to get in enough. I’m sort of picky and kind of lazy when it comes to lunch. Last weekend the monthly Costco trip ended up including a bag of bell peppers and a Rotisserie chicken. Somehow, that added up to me stuffing bell pepper halves with chicken and devouring them. I’m all about bell peppers and salmon right now, which is a nice change from my usual eggs and peanut butter obsession.
In the mean time, DEFINITELY make this easy, fresh, delicious, and amazing combo. It’s the I don’t want to make lunch, lunch. I wish I could have it today but I’ll be up at another club way across town for a meeting, but on a positive side that club is across the street from Whole Foods, so something tells me I think I’ll be fine. Super short post today, so much to do and so little time. Enjoy this quick lunch or snack, you’ll be happy you did.
