In other news, guess who has been running (still)??? As cautiously as possible I’ve been increasing my intervals and time at 4:15am. Nothing makes me feel better and centers me for the rest of the day then to knock out my workout in the AM. Plus did you see my instagram photo of the javelinas I saw hanging around across the street? #arizonawildlife
This is how my hair turns out sometimes when I wake up at four am to workout… hello ponytail and shiny headband that makes it look like I tried when really I didn’t…
Breakfast was eaten once I got to work around 7:30am, it was leftover spaghetti squash crusted quiche… sooo goooood….
followed by a pear, which was crunchy and delicious
That held me over nicely till lunch when I dove into my salad with chicken, grapes, goat cheese, and Walden Farms balsamic dressing.
Then I realized I forgot my beloved daily baggy of carrots and I was definitely still hungry, luckily I keep food at all times. I ate a half a Coconut Cashew Quest bar from the depths of my purse (no picture.) When I got home Mr. Hungry was out helping his Mama out buying a new bed frame and other errands she has to do to get ready for moving to Morgan Hill, so I was on my own for dinner. That means I could have WHATEVER I wanted for dinner. What would Mr. Hungry never eat for dinner? Eggs and Nut Butter.
French Toast Scramble (from carrotsncake) topped with loads of peanut butter. I was still hungry after and wanting more nutbutter so I went for a slice of Sprouts Multi-Grain bread topped with Nutzo. That hit the spot!
Right before bed dessert came in the form of 7-8 frozen mango chunks at about 8:45pm.
What’s the most interesting animal you’ve seen randomly out and about?
Mine was the mutant possum that lives on the Loma Linda University campus where I went to graduate school. That thing was HUGE and would come out in broad daylight!
