Craving Mexican food? This paleo ground beef taco salad is a healthy and delicious way to give in! Ready in 20 minutes and perfect for an easy meal prep!
Happy middle of the week saved dinner recipe! ha ha I’m just kidding. Well technically I did make this in the middle of the week last week and it did keep me on track!
I’ve been working on getting this next month of WTE? Meal Plans ready for the awesome subscribers and that has really helped me see what kind of I need to be creating the plans. Easy, tasty, easy, and tasty – those kinds of recipes that’s what this year at HH is all about.
This recipe may not be 5 ingredients, but it’s hella easy and takes less than 20 minutes from start to finish. It’s so quick and easy I had to talk myself into even calling it a recipe.
Then after doing some google research, I realized it’s totally a recipe. The top-ranked taco salad recipes on google have some serious ingredients in them, like Doritos. It probably tastes amazing, but not exactly what I think of when I want to stay on track during the week.
The healthy recipes all had beans and corn in them. Two ingredients I’m not a fan of, not because I think they are unhealthy but because I don’t like them. Plus, I’d rather have more chips as my starch instead of beans and corn. #priorities
So let’s talk about ingredients:
Ground Beef – I’m a big fan of the 100% grass-fed meat (for all these reasons )and I get mine every month in my Butcher Box. If you want to use ground beef but can’t afford grass-fed, get super lean ground beef (toxins are stored in the fat, get rid of the fat and get rid of the toxins.) Or, you could sub ground chicken or ground turkey. If you sub ground chicken, check out my ground chicken taco meat recipe!
Onion – This is a nice flavor addition but not totally necessary, skip if you want.
Taco Sauce – I’ve tried two different taco skillet sauces Frontera and Simply Organic, I like both. I chose to use premade sauces in these recipes because it adds flavor and saves time, it’s lazy but that’s how I cook in real life.
Bell Peppers – These are what supply a huge amount of unique flavor to this recipe, plus they are packed with twice as much Vitamin C as an orange!
Romaine Lettuce – I think it gives the salad a nice crunch, but sub other greens as you wish!
Salsa – This is my go-to recipe for salsa, but last week I ate TJ’s Salsa.
Plantain Chips – Plantains chips are not sweet like a banana, they are starchy and salty. We love TJ’s plantain chips because they’ve got the perfect amount of crunch but aren’t so hard they will break your teeth. (NO TJ’s near you? Amazon Prime it!) Feel free to make your own or sub your favorite kind of chip here.
Avocado – feel free to sub guacamole or cheese here. Personally, I feel like I can never taste cheddar cheese on a salad so I left it out in favor of more guac/avocado!

Paleo Taco Salad with Plantain Chips

Paleo Taco Salad with Plantain Chips
Ingredients
- 1 lb ground beef I get mine from Butcher Box
- ½ cup onion chopped
- 1 cup taco skillet sauce
- 2 bell peppers any color, chopped
- 4 cups romaine lettuce
- 1 cup salsa
- 40 plantain chips
- 1 avocado or ½ cup guacamole
- Garnish with green onions
Instructions
- Add ground beef and onion to a skillet on medium high. Sauté on the skillet until the ground beef is fully cooked (no longer pink.)
- Add chopped bell peppers and skillet sauce, simmer for 5 minutes.
- To make each salad layer: 1 cup romaine lettuce, ¼ of ground beef mixture, and ¼ cup salsa on top. Top with ¼ avocado or 2 tablespoons guacamole & 10 plantain chips.
- Garnish with green onions.
