Hi Friends! I’m just popping in to finally officially share the crockpot carrot recipe Mr. Hungry enjoyed in his lunches for two weeks in a row! I shared it earlier last week on instagram and Facebook but I wanted it to be in the books for the blog so here it goes!
Ingredients:
- 2lbs baby carrots
- ¼ cup brown sugar
- 2T coconut oil
- sprinkle of cumin, cinnamon and garlic
Directions: Place all ingredients in crockpot for 7 hours on low or 5 hours on high (or until desired tenderness is reached).
For his lunches we used the aidells chicken meatballs (precooked), brown rice (pre cooked) and the carrots! Super easy, no mess and healthy!
