Hi Y’all, this weekend was awesome! One of my best friends and bridesmaids came from San Francisco for Country Thunder!!!!!!
On Friday, I left the company spring picnic a little early to pick her up from the airport. After showing her the new casa and neighborhood we headed out to Sandbar. I’d never been there before but tons of people told me it was fun and we should go. I didn’t realize it was a BAR BAR, I thought it’d be more like restaurant bar. At first we had trouble finding seats but once Kelse scoped out an open spot we were good for the night. We had an amazing time catching up while digging into chips and guac, margaritas, and shrimp tacos!
Saturday morning breakfast burritos from The Original Burrito Company were in order, no pictures of that either I was too busy INHALING mine. Then it was time to get ready for Country Thunder and head over to my sister in laws house so we could carpool out there.
In true country western theme we mixed sweet tea vodka and low calorie lemonade for our pre-gaming fun! I never realized sweet tea vodka was actually a vodka flavor, I always thought it was a pre-made mix like margaritas or something. After we finished those it was time to head in to the concert. In my head I thought I took tons of pictures… but I took pretty much zero.
The concert was an absolutely blast though!
We pretty much spent Sunday recovering and hanging out by the pool…..only one little slip up, Paul accidentally locked us outside while he went to the gym for an hour and half. He brought us Venti Caramel Frapps (light) to make up for it though! Again no picture, to busy inhaling. I was definitely sad to see her go, but it was awesome I got to see her only 5 months after the wedding!
I didn’t post a meal plan last night because I’m still following last week’s meal plan but modified a bit (the time I bought groceries for a whole month.)

Tuesday (4/15)- 5 Ingredient Cheesy Brussels Sprouts and Chicken Sausage
Wednesday (4/16)- Random Freezer Food (homemade baked corn dogs, chicken pot pie, salmon burgers)
Thursday (4/17)- Spinach & Feta Quiche/Frittata
Friday (4/18)- Tuna Melts & Green Beans
Saturday (4/19)- wing it
That’s it! I hope your Monday was productive and as least stressful as possible. If not, try and unwind a little tonight with a glass of wine, good book, or favorite TV show. We’ve got four more days to go!
