Good morning! How are you guys???? Did you have work off yesterday like Mr. Hungry or were you grinding like me? I didn’t mind getting back to work, I love what I do so I can’t complain. Plus we had a few fun things that went on this weekend. Like taking Nala bear hiking!
Oh, my she had so much fun hiking and she did the craziest thing. So we went hiking by our old house in Ahwatukee and as we started driving through our old neighborhood she got so excited she jumped the back seats. She was running back and forth from window to window, I think she recognized the neighborhood she grew up in as a puppy!
Sadly we forgot that the trail is seriously overrun with bikers. Every five seconds we had to move out of the way of getting run over, so that was no fun. We probably won’t go back to that trail because it made the hike not really that fun, but we tried to make the best of it. You know Nala still had a good time!
PS we use a front harness and a retractable leash when running and hiking (see my tips for running with your dog) it works so great! When we got back from hiking I got to photograph my new seed cycling recipes I posted yesterday. OMG these have made the easiest breakfast options ever! I eat 1.5 muffins and drink my coffee with 1-2 scoops of collagen and I’m full until noon! PS I’m down to only 4 ounces of caffeinated coffee, I’m doing these decaf k cupswhich aren’t terrible!
Later that afternoon we had a grill out with Butcher Box burgers! I LOVE their premade burgers – we just season them with steak seasoning and pop them on the grill. I ate mine with a BIG ole salad and one grilled chicken tender!
Yesterday my back was cramping SUPER bad and feeling off, so instead of a workout we just went on a long walk with Nala bear! I discontinued use of GLA in the second half of seed cycling after reading this article and it’s really making a huge difference in the severity of cramps. So sorry if that’s TMI, but I am a believer in GLA preventing or decreasing cramps for SURE! Anyways, my MIL is here taking care of Mr. Hungry’s Grandma who got the flu right after Christmas. Grandma stayed with us till my MIL recovered from the flu herself and then she came out. Man, it’s been going around, I swear everyone is sick. I got sick for a couple of days but apparently I fought it off a lot quicker and I am lucky! Point of the story: she is here and went walking with us! Of course, it sucks that Mama Shallal is here because Grandma is sick but we love the extra time. Oh yes, and in case you were wondering I was wearing shorts and a tank top. It’s not that cold out but also Grandma likes to keep the heat at 77 all day so walking outside is the only way to cool off. The things we do for family right?
For lunch, I decided to try something new with my eggs, CLOUD EGGS!
I’ve heard about Eggs on a Cloud or Cloud Eggs forever now and have wanted to try them. I followed this video on YouTube to make them. The only thing I changed was adding dried chives to the egg whites. They were really easy to make and definitely a fun new version of eggs. My MIL and I thought they were good when we were eating them but then they left kind of a weird eggy taste in our mouth. Definitely not something that makes good leftovers. Have you guys tried them? I mean let’s be honest anything with a runny yolk is good for me!
Okay I’ve got a busy morning like always, I’ll leave you guys with my newest video for one of my most popular recipes, Zucchini Noodle Lasagna with Italian Chicken!

Right? But shhhhh don’t talk about it maybe it won’t happen! We could always meet in the middle and go hiking that would be fun!

I really want to go hiking now. I have made cloud eggs, they tasted good but it wasn’t my fave texture for an egg. The kids thought they were awesome though, so it was a fun way to mix it up.

Interesting the kids liked it! So do you make it regularly then or just the one time?
