Hi Y’all! I have an awesome and quick meal for you today that I’ve literally been eating every day since Thursday. I forgot how delicious tuna salad can be and it’s such a quick easy meal I thought I’d share it here!
Here is what I’ve been using to throw it together:
– 1 stalk celery
– 1 roma tomato
– dash of garlic salt (over the veggies before I add the tuna)
– 1 can of Skipjack tuna from TJ’s
– enough miracle whip light and mustard to make it a bit creamy ( couple spoonfuls)
Then I realized the miracle whip I’ve been eating expired in February… well I’m not dead or sick yet and I thoroughly enjoyed my tuna salads. However, once I threw it away I decided to try making some at home. Anything you can eat 6 months past it’s expiration date (other than maybe canned beans) really shouldn’t be for human consumption, right? But making mayo sounds intimidating, when you google it you get a million post on how NOT to fail at doing so. So naturally I assumed my first attempt would be a fail, I was thrilled it even came together and looked like mayo!
A wee bit too much garlic though, I’m thinking I’ll share the recipe via video format when I get it down. I’m still amazed I was able to pull off mayo consistency and it wasn’t even that hard!
Stayed tuned this week I’ve got so many great things coming down the pipe this week including an incredible giveaway, an awesome recovery smoothie, a delicious muffin recipe, and more!
