A breakfast literally loaded with veggies for the win! This quiche is packed with all the protein from the eggs and produce that you need to start your day off right! (Gluten Free and Vegetarian)
This was what I made the day after all my family went back home, this was my get back on track load my day with veggies meal and it was GLORIOUS! I mean, not only does it taste savory and delicious, but it also made me feel WAY better.
I went from stuffing myself with allthesugar to loading my morning with protein and produce. A definite improvement in my nutrition.
I also topped it with the last little bit of leftover bacon cheddar. Sooooo salty and good. Of course, if you don’t tolerate dairy you can skip the cheddar and just sprinkle a slice of crumbled up bacon on top.
Remember, healthy eating does not have to taste like bland crap! Also, remember there is no such thing as perfect, especially when it comes to eating.
Okay, that’s enough lecturing for today. How is your week going so far? It’s Wednesday, that’s the worst isn’t it? No Monday motivation and the weekend isn’t quite in sight, how annoying! You know what else is annoying?
My rib finally feeling better, only for my other shoulder to get pissed off. We did a million barbell things the other day and I think my body just did not enjoy holding the bar in that position for that long. January is so not the month of motivation for me, apparently, it’s the month of constant injury…. when will it end?!?!?!?!?
You know what’s funny? Mr. Hungry was out of town for a few days and the whole time he was gone my eye twitched like crazy. The owner at my gym was making fun of me saying that it was stress from my other half being gone, I thought that was a hilarious idea up until the eye twitch stopped the day I picked him up.
Well isn’t that eye-opening, ha ha pun intended, see what I did there? I thought it was weird because nothing had changed about my caffeine intake or hours of sleep. So, it would appear, my eye muscles only chose to function appropriately when Mr. Hungry is in town.
No one tell him, that man needs no ego pumpin, that is FOR SURE! I’ve learned a few things from his ego, though. Like how to blame clothes not fitting on the clothes instead of on my body.
Seriously, you know it’s true. When clothes don’t fit men it’s because they are unique and that shirt doesn’t have wide enough shoulders or a slim enough fit. When it doesn’t fit a female it’s because she needs to lose 10 pounds. Ponder that next time you buy clothes or while you are eating your rock star healthy breakfast of broccoli and cauliflower rice quiche.
Broccoli and Cauliflower Rice Quiche
Ingredients
- 1 tsp avocado oil
- 12 ounces cauliflower rice 12 ounces package frozen
- 1 cup broccoli steamed and chopped
- 4 large eggs
- 1 cup egg whites 100% liquid
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp salt
- sprinkle pepper
- sprinkle turmeric
- ¼ cup bacon cheddar cheese can omit for dairy free or sub crumbled bacon
Instructions
- Preheat oven to 350F
- Grease a 9 x 13 oven safe casserole dish with avocado oil.
- Add 1 tsp avocado oil to skillet with frozen cauliflower rice, cook until rice is tender, stir frequently.
- Whisk eggs and seasoning in a large bowl.
- Pour egg mixture into casserole dish, then add the broccoli and cauliflower rice. Make sure the veggies are evenly distributed throughout dish.
- If desired top with cheese or crumbled bacon.
- Bake for 40-45 minutes or until set.

Mmmm. I love broccoli quiche. I don’t know why I didn’t think to add cauliflower rice to it. Definitely a better way to start the day than a bowl of cold cereal!

Yes, I would sub 1 egg for 1/4 cup egg whites, the nutrition stats will be different though.

Trader Joes, Sprouts or Costco are the places I get mine, but more stores are starting to carry them. If you can’t find it you can make your own by using the shredder attachment of a food processor!
