Hi Friends! Happy Wednesday, I told you about short weeks didn’t I? The dragging feeling, I know you’ve got it too! Well I’ve got an easy delicious lunch or snack option to put a little pep in that step. This my new favorite combination: bell pepper sliced in half, smear with hummus, and top with rotisserie chicken. It’s the satisfying, refreshing crunch I need, right when I need it. It’s funny, I think my clients naturally assume I’m a vegetable monster, but I struggle like everyone else to get in enough. I’m sort of picky and kind of lazy when it comes to lunch. Last weekend the monthly Costco trip ended up including a bag of bell peppers and a Rotisserie chicken. Somehow, that added up to me stuffing bell pepper halves with chicken and devouring them. I’m all about bell peppers and salmon right now, which is a nice change from my usual eggs and peanut butter obsession.
You’ll have to excuse the terrible pictures in terrible lighting. I’ve asked for an awesome camera to come early from Santa, I think his response got lost in the mail or something…
In the mean time, DEFINITELY make this easy, fresh, delicious, and amazing combo. It’s the I don’t want to make lunch, lunch. I wish I could have it today but I’ll be up at another club way across town for a meeting, but on a positive side that club is across the street from Whole Foods, so something tells me I think I’ll be fine. Super short post today, so much to do and so little time. Enjoy this quick lunch or snack, you’ll be happy you did. Bonus, it’s totally D.TOX friendly (assuming you get a rotisserie chicken with approved marinade and seasonings.)
