Hi Blogland, Happy Monday! How was your weekend? Mine was really good!
In case you missed it yesterday I posted a round-up of all my favorite healthy pumpkin recipes here at Hungry Hobby in celebration of National Pumpkin Day, you can check it out HERE.
On Friday, Mama Shallal was in town for the weekend so we HAD to take her to one of our favorite restaurant local pizza restaurants, Spinatos! We started with a big family size salad.
This time we tried the polenta fries, they were so good I definitely want to try and recreate those at home some time!
Of course my favorite spinach pizza!
Then we went over and got some frozen yogurt across the street to eat later while we chatted and watched Shark Tank. Mr. Hungry is OBSESSED with that show! BTW the combination of apple pie and caramel froyo is lit-er-ally AH-mazing.
Saturday we hit up Mr. Hungry’s favorite local restaurant for breakfast. I got an egg white omelet packed with cheese and veggies! Usually I’m all for whole eggs, there are tons of nutrients in the egg yolk and I usually eat them at home. However when I’m out at a restaurant, if I know the omelet is going to be packed with cheese or meat (more than I would have at home) I’ll go for egg white to keep things a bit even.
I also had some of Mr. Hungry’s french toast and biscuits & gravy.
Then it was rush, rush, rush. After running Mama Shallal to the airport I felt like we had so much cleaning and laundry to do. How do two people make such a mess? I’ll be honest it’s mostly me, as an only child I did not learn how to pick up after myself. Oh well, we also rearranged my office. It’s nothing stellar or blog worthy but it’s a lot more workable! We finished off the night with leftovers, pumpkin cookies, and a movie.
We meant to go to mass Saturday afternoon but we ended up going Sunday morning because we got so busy. I love my new costco Calvin Klein leggings/jeans!
After church I went for a 2 mile run, it wasn’t bad, it wasn’t stellar either that’s about all I have to say about that. I’m still going to physical therapy and all that fun stuff. On my way back Mr. Hungry called to tell me he got a last minute invite to go the cardinals game. I took the opportunity of having the house to myself to watch THREE episodes of Once Upon a Time and to celebrate National Pumpkin Day with a post run Pumpkin Coffee Smoothie.
Then I did some sunday prep up for the first time in a long time! I made baked pumpkin pancakes, some muffins that were kind of a fail, and paleo bread.
All that baking made me hungry so I followed up with a delicious egg sandwich using spelt muffins. The muffins were new to me but I really liked them! Definitely more dense than a traditional english muffin, but I typically like my bread hearty and dense so I loved them!
I also made tons of iced coffee for the week, like I do every week.
3 Ingredient Green Curry Chicken
Before I knew Mr. Hungry would be gone all day I had thrown this into the crockpot for dinner, it turned out great and it made tons (hooray for leftovers)! It’s a simple healthy crockpot meal that is super versatile so I thought I should share it right away!

3 Ingredient Green Curry Chicken & Weekend Recap
Ingredients
Coconut Green Curry Chicken:
- 2 lbs chicken breast frozen or fresh is fine
- 1 Jar TJ's Green Curry Simmer Sauce
- 1/3 Can Coconut Milk full fat recommended
Instructions
- Add all ingredients to crockpot. Cook on high for 4-6 hours or on low for 6-8 hours. You can shred the chicken at the half way point in before serving.
- Serve in lettuce wraps, cauliflower rice, quinoa, brown rice or whole wheat pita bread. They would all be good options!
