Loaded Blueberry Peanut Butter Overnight Oats
I literally am so excited to share this oatmeal recipe with you guys today. You don't even know how good these are, but girl, you are about to find out! The thing is though, I have to be honest, it's totally not my recipe.
When we were in Seattle for my friend Alyssa's bachelorette party, the subject of breakfast came up. Personally, I love oats, but I HATE being hungry five seconds after I eat them, so I asked her what she puts in hers.
I immediately added a note section in my phone and took notes. WAIT, you add PBFit AND peanut butter? GENIUS, why didn't I think of that?
The very first Monday I got home from traveling I made these oats, and of course, they were delicious! I always think oats are delicious; I just despise having to eat second breakfast during my busy morning.
After 5.5 hours I FINALLY got a little twinge of hunger. I was texting her telling her how awesome it was and how delicious it was. I'd say she probably thought I was INSANE, but we met in the dorms our freshman year of college, texting about oats is definitely calm compared to our past lives.
By the way, I don't cook oats on the stove, EVER. Especially not in the morning, why the hell would I dirty up a pan in the morning????
I use a bigger jar than the one shown, a regular mason jar, so there is room for stirring. Combine all the ingredients except the peanut butter then heat it up in the morning. Then I top with a big spoonful of peanut butter, no I don't measure it because I like to be #blissfullyunaware.
Then I devour, and I'm set for the next 5 hours guaranteed. One day I ate them at 630am, when to Orange Theory at 9 and didn't eat until noon and was fine. That's a fueling win if you ask me! If you need to transport your oats, you can mix the peanut butter in with the rest of the mixture, that totally works too.
I just like to see my big spoonful of peanut butter in the morning; it makes me happy. That and iced coffee, but mostly the iced coffee if we are being real.
Also, add more milk as needed to keep them creamy. Alyssa adds coconut milk when she wants them more creamy. Maybe she should have the food blog? I don't know but these things are amazing, and I've eaten them for two weeks straight.

Loaded Blueberry Peanut Butter Overnight Oats
Ingredients
- 1 scoop PBFit
- 1 scoop collagen
- ½ cup old fashion rolled oats
- ½ cup unsweetened vanilla almond milk
- 1 teaspoon honey
- ½ cup blueberries or other berries
- 5-6 dried tart cherries optional
- 1-2 tablespoon peanut butter aka one spoonful
Instructions
- Combine PBfit, collagen, oats, blueberries, teaspoon, and almond milk in a jar let soak overnight or for at least four hours.
- If desired, heat up oats in a jar for 1-2 minutes then top with peanut butter.
