These southwestern inspired cottage cheese muffins are the perfect high protein, healthy-go-to, savory and cheesy breakfast or snack!
I know it’s usually weekend recap day, but to be honest we had a pretty relaxed weekend, not to much to report. Don’t worry I’m planning on sharing our laid back weekend fun later today or tomorrow, but right now it’s time for another Recipe Redux, let’s check out this month’s theme:

As you guys know I’ve been working on this recipe for a while, so while I didn’t plan for it to be my recipe redux post for this month it definitely worked out! Cottage cheese is one of the foods I used to hate but I’ve become obsessed with recently, and these muffins definitely spiced up my breakfast routine the last couple weeks!
In order to make these I checked out a TON of recipes, but none of them truly spoke to me, so then I kind of just did my own thing. I made these twice, the second time I cut down the oat flour and added bell peppers, that’s when they really came alive. Not only do you get a serving of veggies in at breakfast, #fistbump #win but the pepper add a savory southwestern flavor that compliments the spicy pepper jack perfectly.
Ingredients:
- 4 whole Eggs
- ¾ cups Egg Whites
- 1 cup Cottage Cheese (I used 2%)
- ½ cups Oat Flour
- ½ cups Shredded Pepper Jack Cheese
- 1 whole Green Onion, Chopped
- 1 whole Bell Pepper, Chopped
- ½ teaspoons Baking Powder
- ¼ teaspoons Salt
Directions:
- Preheat oven to 375ºF and grease or line a muffin tin.
- Whisk together eggs and egg whites. Mix in remaining ingredients.
- Divide mixture evenly among 12 muffin cups. Bake 25–35 minutes, or until golden crust forms on the top and inserted toothpick comes out clean.
