Good morning friends! Guess what? I made a veggie loaded quiche to have for breakfast this week and it was even more delicious than I could have ever imagined! I mean, I only had two measly little cartons of egg whites (no real eggs in sight, I haven’t gone to the store yet since everyone left on Sunday/Monday), some cheddar cheese and broccoli.
I thought, “okay self, you can throw that all together and make a quiche and that will be sustainable till you get a chance to go to the store. Oh and by the way self, you have time to take a picture of it at a normal time of day, so it will probably photograph decently.”
Still using an iPhone though because I’m overwhelmed with camera choices, so there is that dilemma. Anyhow, I did exactly that, I threw it all in a bowl and whisked it together with dried parsley and chives. Then I thought, “self, Mr. Hungry will not eat any of this (he stays away from eggs on their own) you can douse it in red pepper flakes if you want”, so I did! What came out of the oven 45 minutes later was even more delicious than I had imagined.
Opening the oven I was greeted with a lightly golden cheesy crust and a faint spicy fragrance. I thought, “hmmm, this is going to be pretty good.” After spending some time photographing I figured I’d have a piece before I was out the door for my hair appointment.
Then I took a bite, and that’s when the magic happened, I did a small short double takedown at my plate. Is that really just an egg white quiche I’m eating? It was so much more than that, it almost tasted like a spicy broccoli cheddar soup with fluffy eggs instead of potatoes.
The bold flavor of the cheese was outstanding paired with the hearty veggie packed texture and the whole thing was ignited by the spiciness of the red pepper (love me some spicy). I don’t know maybe I was just really hungry (I don’t think I was), but I thought this was the most amazing simple quiche ever…. I guess you’ll have to try it for yourself and let me know!
Spicy Cheddar Broccoli Quiche
Ingredients
- 2 Cups Liquid Egg Whites
- 2 Cups Chopped Cooked Broccoli
- 2 Ounces Cheddar Cheese Shredded
- sprinke of parsley chives, and red pepper flakes to taste
Instructions
- Preheat oven to 350F
- Whisk together all ingredients except red pepper flakes
- spray/oil an 8x8 casserole dish and pour egg mixture in
- Top with sprinkle of red pepper flakes across the top
- Bake for 40-45minutes or until eggs are completely set
- Let cool for 5-10minutes before eating

Spicy Broccoli Cheddar Egg White QuicheThe nutrition facts are great, but not very substantial calorie wise since I only used egg whites. My plan is to eat this for breakfast with avocado to help make it more filling or as a high protein snack!
