This tangy creamy salsa dip can be thrown together in 5 mins with pantry staples! It's a little bit tangy, a little bit spicy, & full of goodies in every bite!
Hi, friends! As you know, I love easy one-dish meals, especially when it comes to Football + Mondays, like last night. Although isn't there also football Sunday and Friday too? Really just call it what it is, it's football all the time for the next however many months football season lasts.
Clearly, I have no idea. ANYWAYS our house is always open to friends and family during football season. Mr. Hungry likes to have people watch the game with him that actually give a damn about football, and I like to have people entertain me while football is on.
Anyways, when people drop by I need something easy to whip up that won't take a million hours and won't leave me with a million dishes to do. That's why today I partnered with RO*TEL to bring you this delicious, life-saving dip!
For this dip, I combined an herbed goat cheese, greek yogurt, 2 cans of RO*TEL® Original Diced Tomatoes and Green Chilies, and goodies like canned artichoke hearts as well as black olives. If you are a goat cheese hater, don't fear, Mr. Hungry actually said: "this dip is the bomb, I can't believe you got me to eat goat cheese."
So you can safely serve it to goat cheese haters as well as the cooler people in the world that LOVE goat cheese, like me. RO*TEL is definitely a pantry staple in our house. I'm all about making healthy cooking as easy as possible, saving time with canned diced tomatoes and green chiles is definitely a win!
If you've never heard of RO*TEL, look for it in the canned vegetable aisle. I actually made the mistake of looking for it in the Hispanic foods aisle, but nope, it's in the canned food aisle next to the tomato sauce!
I keep a few cans in the pantry at all times to throw in casseroles or make dips from (it's also delicious combined with mashed avocado and greek yogurt.) We ate this dip with chips, and I tried to eat with veggies only chewing on one side of my mouth but that didn't go that well. Can not wait till my tooth is fixed!
So, I tried to make sweet potato "chips" which turned into kind of a fail because they never got crispy but also worked perfectly because they were soft for me to eat. #recipefail #chewingwin

Tangy Creamy Salsa Dip
Ingredients
- 10 ounces plain whole milk greek yogurt
- 8 ounces garlic and herb goat cheese
- 2 cans RO*TEL® Original Diced Tomatoes and Green Chilies
- ½ teaspoon salt
- 1 ounce sliced black olives
- 1 can artichoke hearts 1 15 ounce can
- garnish: smoked paprika and green onions
Instructions
- Combine yogurt and goat cheese in a food processor, by hand, or with an electric mixer until creamy and no chunks.
- Fold in the remaining ingredients.
- Add garnish and serve immediately or store in the fridge. Dip will be good as long as yogurt or goat cheese would be good.
