In honor of Saint Patricks Day I started this morning off with an awesome green smoothie, which I attempted to make as green as possible (loaded TONS of spinach into it)! I wish I had mint extract to make it like shamrock shake…. but oh well, it was still delicious! Hint: the sun butter is the key it covers up any taste of spinach at all.
I’ve got my green shirt on, I know I’ve got some Irish heritage so now I’m praying for some good old St. Patricks Day Irish luck. Fingers crossed the underwriter quits asking for documents and we get to close the house today! Note to new home buyers out there, don’t ever agree to a 30 day close date unless you want it to be close to the most stressful 30 days of your life. Anyway, I stayed home from work today to be ready to go sign paper as soon as everything is cleared, hopefully it all works out! So now I’m sipping on my smoothie, biting my nails, and watching the clock for the morning, fun fun fun!
Ingredients:
- 1 frozen banana
- 1/4 cup orange pulp (I froze some pulp after I made orange juice last weekend)
- 1T sun butter
- 1scoop vanilla protein powder
- 1T cinnamon
- 4 cups spinach
- 3/4 cup coconut/almond blend
- 1/2 cup ice
- 3-4 drops stevia
Directions: Add all ingredients to blender and blend until smooth!
This is a great smoothie to celebrate St. Patricks Day with but you know what I’m thinking? I’m thinking it’s an even better nutrient slam for tomorrow morning, just in case you’ve got a headache from one too many beers tonight. You might also want to keep that Advil and water close by too though… spinach can only take you so far. Have a SAFE and FUN St. Patrick’s Day everyone!
