Happy National Best Friends Day! Today I want to share a story with you about one of my best friends who I am so grateful to have in my life! You guys probably remember my friend Megan, but you probably don’t know how we met and got so close.
Megan began linking to some of my posts on her Sunday Skinny round up, that’s how I found her blog. After reading a little bit about her I realized we had very similar hormone issues, and when I realized she was in Arizona I took a risk and asked her to meet up with me.
I don’t think she will ever understand what the support meant to me that she gave me that day. Years of amenorrhea was a scary thing, to hear about someone who recovered from it was so valuable and hopeful to me. We didn’t actually hit it off that day though, just like anything in life a little bit of luck brought us closer together.
We ended up on the same flight to blogfest and the rest is history. We were basically attached at the hip all of Blogfest except for when I was Zumbaing and she was cycling. This year’s blogfest is in Las Vegas, I can only imagine how much fun we are going to have!
Choosing the career path I’ve chosen (private practice/blogging/teaching) means from a professional standpoint I’m almost always on my own. As an extrovert, that has been extremely challenging at times. It has also made it REALLY hard to meet new friends.
I don’t have peers or co-workers that I see daily that have similar interest or can vent about the things going wrong (technical issues on the blog make me want to bury my face in a pillow.) Now, Megan and I talk on WhatsApp all day and I never feel lonely or out of touch.
More than a co-worker though. Megan and I totally get each other, which is even more of a blessing. I’m so thankful to have her in my life! What does this have to do with pancakes?
Well, mostly I feel like Megan is the pancake QUEEN she has so many pancakes on her blog I’m always drooling over them. If Megan came over for brunch and mimosas I would DEFINITELY make her these pancakes!

Sweet Potato Protein Pancakes
Ingredients
- 1 large sweet potato (about a cup mashed)
- 1 cup liquid egg whites
- 1 scoop vanilla protein powder (I used whey)
- 1/4 cup ground flaxseed
- 1/2 tsp baking powder
- cinnamon to taste
- 1/2 tsp vanilla
Instructions
- Combine all ingredients in blender and blend till smooth, about 30 seconds to a minute.
- Cook pancakes on medium heat, flipping after 30 seconds to a minute.

This was absolutely horrible. I even tried to top with some fruit and it still didn’t help. Completely tasteless. Extra Star for nutrition but wouldn’t make this again

Sorry to hear that! Usually when protein recipes go wrong it’s because the protein powder didn’t work with this particularly recipe. Have you baked/cooked with your protein powder before?
