Buffalo Cheddar Quinoa bites with a cheesy spicy kick! Perfect appetizer for the next football party or for an energizing delicious snack!
Hi, friends! Happy hump day, today I’ve got another old post I updated the photos for! I couldn’t resist re-shooting this one, it’s delicious and it’s football food, aka the only reason I watch the Super Bowl.
These are full of the rich bold flavor of Cabot cheddar and the spicy kick of Franks Red Hot, they are the perfect healthified game day snack. Don’t you just want to pop one in your mouth? I thought so, that’s why I’ve renamed them poppers, instead of bites!

I know most people would have done blue cheese or goat cheese with buffalo sauce, but to me, there isn’t anything better than spicy + cheddar cheese paired together in one bite. Some people find quinoa too “earthy” but I guarantee you with this combination you won’t have that problem in these bites!
These are gonna be a huge win on super bowl weekend for sure! You know what else is a win, covering it with ranch and dunking it in ranch, basically all the ranch. My favorites are OPA Ranch and (affiliate link–>)Primal Kitchen Avocado Oil Ranch.

Buffalo Cheddar Quinoa Bites
Ingredients
- 1.5 cups cooked quinoa
- 2 medium zucchini shredded squeezed dry
- 1/3 cup Franks Red Hot
- 6 oz cabot extra sharp cheddar cheese
- 1 egg
- 1 T garlic powder
- 2 roasted green onions
Instructions
- Pre-heat oven to 350F
- While quinoa is cooking add all ingredients except for egg in large bowl. Add 1.5 cups HOT quinoa to the mix (so right after you finish cooking it so cheese will melt) and combine well. Add in 1 egg and mix till just combined.
- Divide mix among 30 mini cups in a baking tin and bake for 45-55 minutes or until set. Let cool 10-15 minutes then serve!

Arman! I wondered why no quinoa recipes for you! Hint…cook it in broth or milk… no “dirt” taste that way!
