When veggies are hard to come by, you can sneak in all healthy food in at least once a day with my go-to pregnancy smoothie!
Happy Labor Day friends! Man, this holiday snuck up on me real fast! Too fast! Last week I mentioned what we would do in class on Monday and my students promptly reminded me there was no school!
And guess who gets to rework the class schedule now…. whoops totally forgot about Labor Day! So I’ve been aware of this holiday since Wednesday, not a lot of lead time. Totally crazy I forgot to since we are planning on going to the Dbacks vs. Padres game!
Anyways, lately, I’ve been so into working ahead for my maternity leave that I feel like I haven’t gotten to share my go-to recipes lately. Mr. Hungry LOVES his green smoothies in the morning so he got me on board and thank goodness he did because it guarantees I get some nutrients in at least once a day. Why is eating healthy so hard during pregnancy? Seems counter-intuitive to me, but whatever.
Mr. Hungry’s smoothies are similar but sub-ice for the mixed berries. Yep, its basically frozen spinach milk I don’t know how he drinks it but he requests it every single morning. He prefers the icy texture over the creamier texture fruit gets the smoothie. I think he is crazy but I don’t have to drink it. Instead, I drink this version!
PS just a little tip, I use almonds so that I don’t have to a wash a spoon every morning from dipping it into the almond butter. Yep, I can’t stand dishes and I’ll do anything to avoid them. Spinach & Berries Smoothie
Ingredients
- 2 cups organic spinach or mixed greens
- 1 cup unsweetened vanilla almond milk
- 1 cup organic frozen mixed berries
- 2 scoops collagen powder or protein powder of choice sometimes I did vanilla whey
- 1 tbsp honey
- 2 tbsp almonds or 1tbsp almond butter
- 1/2 frozen banana optional
Instructions
- Blend ingredients until smooth and enjoy!
