Hi Friends! Glad you all are enjoying the Zucchini Chip post for the Recipe Redux from this morning, it was a good one! I love seeing everyone else’s ReDux recipes too. It’s funny how so many people can be given the same challenge and the recipes come out SO different. Even the other zucchini chip recipes are different, I LOVE that. This morning I was feeling the jet lag from Texas, lack of sleep and 6 mile run all at once this morning. So I stopped by Starbucks for a Venti Americano, now I feel like I might live through today.
I previewed the Pumpkin Pancake Bake I had for breakfast this morning on instagram last night. It was DELICIOUS, I plan to have it posted by the end of the week! In the mean time, I’ll just tell you the baked version is based off the very popular Single Serving High Protein Pumpkin Pancake!
Tonight’s HIGH LOW HIGH forecast?
High– I’m soooo looking forward to Hot Yoga and maybe a relaxing walk.
Low- I’m not looking forward to putting away the MASSIVE amount of laundry I hung up to dry last night.
High– Grilled Chicken & Cashew Stuffed Cinnamon Sweet Potatoes for dinner (at least that’s the plan)
I’m off to get some lunch in me before my lunch hour ends!
