Congrats Wednesday is gone and now it’s smooth sailing till the weekend. Quick yesterday recap then I’m off to study.
Still enjoying the Healthy Shrimp Enchilada Bake, man I love casseroles… they feed an army or create a never ending food supply for two people. Score! Bonus I actually remembered to take a picture so you can see the leftovers look just as amazing as the first day.
Dinner was a tag team effort last night. Paul made the salmon while I made some healthy “fried” Brussel Sprouts and roasted a sweet potato. We also shared some of his lunch pad thai leftovers since we were so hungry and dinner wasn’t going to ready for another hour. Then, we sat down to watch Parks and Rec…. down right hilarious. Paul watches a bunch of shows, but this one is my current favorite of his line up for sure.
I kind of forgot to toss the brussels sprouts so they got a little charred but still good, in fact so good that I actually ate so many I kind of felt sick, whoops. I didn’t think it was possible but I guess there is such thing as too many vegetables.
I followed up with a piece of pumpkin protein fudge, perfect little treat. This photo cracks me up because it reminds me of yesterday’s post about Things I Hate and Love (painting my nails was definitely on the list.)
Ok, and I had a fortune cookie that Paul brought home. My fortune was not near as good as his though, but I guess as long as one of us gets prosperity and success we are good to go right? I think this fortune might have had something to do with the upcoming wedding?
