Today started off with a lot of meetings on my schedule and slowly one by one they got canceled. Luckily for me that meant I could catch up on a few things. I didn’t eat breakfast till around 9, so I wasn’t hungry for lunch till around 1pm. I had another of the same asian chopped salad from yesterday with romaine, nappa cabbage, green onions, chopped carrots, honey roasted peanuts and marinated chicken with homemade Asian Peanut Vinaigrette. However I forgot to take the picture until after I had already shaken it, so it’s kind of sad looking. I’ll just show you the pretty one from yesterday instead.
After work I battled traffic for 40 minutes then came home and had a minor temper tantrum about my injury. It’s been a week so of course not working out is getting to me. I noticed in just a week my energy level has dropped even though I’m sleeping more. My appetite and mood is off too. Paul thinks I’m over thinking it, but I think not having my daily dose of endorphins is really getting to me. I felt a lot better after walking a mile and doing some yoga, I listen to the paleo podcast again and I still think it’s really funny and interesting! (Would still love podcast suggestions!) I’ll be looking for new ways to lift my energy/mood like catching up with friends, listening/reading funny stuff, and getting some side projects done that have been in the works for a while now. Now I’m standing at the kitchen counter typing this post since sitting all day makes everything worse, I don’t want to add to it. I’ve got my shoes by the front door to take to work and hopefully go on a walk during lunch.
Dinner wasn’t very pretty either but it tasted amazing and took all of 10 minutes to make, a cheesy 5 ingredient sauté type deal with sun dried tomato chicken sausage, shaved brussel sprouts, nappa cabbage, and butternut squash (basically what I found in my fridge freezer) mixed with garlic & herb laughing cow wedges.
Followed by protein fudge for dessert, soooooo gooooooodddddd.
Now its off to finish packing breakfast/lunch for tomorrow. Sometimes it’s hard to decide what I want for breakfast the night before!
